Turkey sausage and peppers

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

What's on your menu tonight?

Here is our menu for the week:

Hillshire Farms smoked turkey sausage cooked on the skillet with sautéed red peppers, mushrooms and onions – sausage on sale with coupon a couple weeks ago, red pepper only 19 cents at Target with $1 mobile coupon posted last week

Rolls – Sister Shubert rolls BOGO with coupon recently

Brown rice

Steamed baby carrots, $1 on sale recently

Shrimp scampi on pasta

BBQ chicken sliders on rolls ($1.99/lb chicken on sale at Lowes Foods through 10/15)

Sweet potato fries

Leftover salad

Baked salmon, frozen, on sale for $5/lb a while ago

Mahatma rice (free with coupons recently)

Broccoli spears

Baked Celentano light cheese ravioli with alfredo sauce topped with mozzarella and Italian Parmesan Kraft Fresh Take (I sprinkle about 1/3 of the bag of Fresh Take over the top of the alfredo ravioli before baking – delicious!)

Some kind of fresh veggie – depends on what is on sale starting Wednesday

Leftover chili, homemade minestrone soup or porkchops. Whatever anyone wants. I think I will have the pork chops and make myself a baked potato.

wildfrenchrose, meatloaf burgers is the only way that I could get my boys to eat meatloaf when they were small. Mix the meatloaf and make it into patties and fry them in a nonstick pan. Only way they will eat them to this date and hubbie prefers it that way. I told them they were fancy burgers and they never missed a bite.

And Faye, your comment reminded me I bought frozen ravioli and threw it in the freezer. Fried ravioli will be on the menu one night this week, as well as chicken & biscuit casserole. And rattlesnake pasta, depending on how long the casserole lasts.

Meatloaf burgers? Never heard of that, but thanks! That's what I'll do with the leftover, dry meatloaf instead of trying to choke it down....little mayo, some wickles. You just saved dinner, chipper. I'll leave the cornbread till another night!

We are having leftover meatloaf burgers, hashbrowns and fruit salad

jdouglas- I'm actually just using the regular cabbage that was on sale at HT. But, savoy would be great too... and would probably plate better, as it's texture is indeed more interesting :-)

Someday I'll remember to finish what I'm saying before I hit the "go" button.

Last night's steak on the grill got rained out, so we had leftover pizza. Surprisingly, it was better the second night. Who would have thought?

So, fingers crossed and assuming the rain stays away, tonight will be grilled asparagus and steak with some kind of potatoes. If the rain doesn't stay away, I'm really in trouble because I have no plan B at all. :p

Everything sounds good! Lots of great ideas and inspiration.

RFB what kind of cabbage are you using? I keep thinking savoy or the long Chinese cabbage that I can't remember the name of.

Kat, your apple french toast bake sounds wonderful!

Working on a new creation (what else is new, lol!) Low Carb Turkey Tetrazzini, and instead of using pasta, I'm going to wrap a mixture of creamy turkey and veggies inside of cabbage rolls. Then top it off with a white wine mushroom sauce and bake. Fingers crossed :-)
