Baked Ziti

I made a vegetarian version of this Baked Ziti recipe from last night and we are eating the leftovers tonight. It was delicious!

Here are the changes I made to the recipe based on many of the reviews of this recipe and my own preferences:

*I omitted the meat and instead added sautéed mushrooms, onions, red bell peppers and green bell peppers.
*Once the pasta was cooked and drained, I added the pasta sauce to it to all the pasta was coated. The recipe calls for adding the pasta to the pan and then the sauce but many posted in the reviews that it was much better when the pasta and sauce were combined before putting it into the pan. That’s what I did and it was great! Once the first layer of pasta was spread in the pan, I made a layer of the veggies, then the provolone slices, then the sour cream, then another layer of pasta and sauce, then the final layer of shredded cheese.
*I also added garlic power, Italian seasoning, fresh basil, and pepper to the pasta a sauce to season it.
*I only used about ½ the recommended sour cream in a layer over the provolone slices.
* For the cheese on the top, I used a Six-Cheese Italian shredded mix
* I baked it at 350 for 35 minutes covered with foil and then an additional 5 minutes uncovered.

Everyone loved it and we are looking forward to having it again tonight!

    I'll have to do some more research on this sour cream thing, and maybe an experiment or two. Does it work well in stuffed pasta recipes too?

    I've never done the cottage cheese thing either, but when I was growing up my sister used to mix it in to her pasta at service to simulate a lasagna taste.

    I am adding some sort of pasta ( love) to our menu later this week just to try the sour cream !! lol
    I hope your daughter does not have a serious injury & your Dad is doing well .

    losltp - I went all sour cream and it was really good. My kids don't love cottage cheese in Italian pasta bakes, but they loved the sour cream. You could try it one way this time and the other way the next time to see which your family prefers. I am sticking to the all sour cream because I already know how the kids feel about cottage cheese. lol

    And I only used about 1/2 the sour cream that the recipe called for. It was enough to cover the provolone slices. I basically put a dollop in the middle of each provolone slice (there were 6 slices) and spread it around gently with a knife.

    thanks for thesour cream suggestion - I have always preferred cottage cheese ( small curd) in my lasagna vs. ricotta .
    Should I go all sour cream or mix with the cottage cheese, parmesan & spices ??

    I use the ziti recipe when I cook for others and ALWAYS get compliments. You never know the sour cream is there either. That recipe is a must have in my book.

    3boys3, the basic recipe I use is here:

    Sometimes I add raisins to sweeten it up even more. Be sure to cover it during the first 30 minutes to keep noodles from getting too crisp.

    We are having turkey kielbasa, shells & cheese and garden peas. It's quick and easy after a long day of work. It's also my daughter and hubby's favorite. I can't argue with that.

    Fayes...your "noodle kugel" sounds yummy! a sweet pasta?...I'M IN!!! Do you have that recipe available? would love to prepare that for the boys!
