Meatless Monday

I made a vegetarian version of this Baked Ziti recipe from AllRecipes.com last night and we are eating the leftovers tonight. It was delicious!

Here are the changes I made to the recipe based on many of the reviews of this recipe and my own preferences:

*I omitted the meat and instead added sautéed mushrooms, onions, red bell peppers and green bell peppers.
*Once the pasta was cooked and drained, I added the pasta sauce to it to all the pasta was coated. The recipe calls for adding the pasta to the pan and then the sauce but many posted in the reviews that it was much better when the pasta and sauce were combined before putting it into the pan. That’s what I did and it was great! Once the first layer of pasta was spread in the pan, I made a layer of the veggies, then the provolone slices, then the sour cream, then another layer of pasta and sauce, then the final layer of shredded cheese.
*I also added garlic power, Italian seasoning, fresh basil, and pepper to the pasta a sauce to season it.
*I only used about ½ the recommended sour cream in a layer over the provolone slices.
* For the cheese on the top, I used a Six-Cheese Italian shredded mix

* I baked it at 350 for 35 minutes covered with foil and then an additional 5 minutes uncovered.

Everyone loved it and we are looking forward to having it again tonight!
