Monday meal plan: What's for dinner this week?

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

What's on your menu tonight?

Here is our meal plan for the week.


BBQ chicken sliders (using $1.99/lb chicken breast I batch cooked in the slow cooker over the weekend)

Brown rice (free Minute Rice Steamers frozen brown rice)

Caesar salad (BOGO Fresh Express romaine at FL through 9/17)


Baked cheese ravioli (using BOGO Celentano ravioli on sale BOGO last week at LF)

Green Giant broccoli spears (.40/box at HT with sale, triples and coupon)



Teriyaki tofu and veggies (green peppers, mushrooms, onions, zucchini) - good deal on tofu at HT with .55/1 coupon from the Nasoya tofu website and triple coupons.

Mahatma rice (free at HT through 9/17)

Egg rolls


Baked chicken breast with Kraft Fresh Take Italian Parmesan breading ($1.99/lb chicken breast at HT fresh meat case everyday and free Fresh Take at HT triples with coupon)

No Yolks noodles (BOGO with coupon from HT through 9/17)



Homemade veggie pizza using HT dough ball

Steamed carrots

Breakfast batch cooking

I also plan on batch cooking French toast this week and tortilla, turkey bacon, cheese and egg roll ups because I have extra Nature’s Own bread from the HT sale and .99/dozen eggs from recent .99 sales.

    Tonight was tortellinis in Alfredo sauce with shrimp, mushrooms and peas. Also, garlic Texas Toast bought on sale and rescued from the freezer. The Alfredo was on sale and the shrimp was a Manager Special at Kroger today.

    WFB and RFB -- thanks!! Can't wait to try them all. One of the things I like about this slow cooker is it has a stovetop-safe insert so I can brown the meat right in it, and then put the insert back in the slow cooker. One less pan to wash, and all that great flavor. I have a London broil in the freezer calling my name. ;)

    RFB -- carmelized garlic? Really? Are you sure we're not twins separated at birth? Yum!!

    We may end up having leftover BBQ chicken w/mac n cheese. I'll save the meatballs for tomorrow.

    jdouglas, I rub salt, garlic powder, and fresh cracked pepper into my lb on all sides, sear a nice crust in skillet, and place it on top of lots of peeled, quartered onions in crockpot. That's it. No liquid, nothing. Cook until meat is done and onions are sitting in their cooked out juices....

    wildfrenchrose- that does sound delicious! I haven't made London broil in ages... thanks for the reminder!

    Tonight we're having Sticky Jelly Jar Chicken- it's a fun recipe I created to use up whatever jelly you have on hand (my favorites are a mix of peach and apricot), plus some nice spices, lemon juice and zest, and chopped onion. Served over Sautéed Spinach with Shallots and Peas.

    jdouglas- here is a recipe for crock pot caramelized onions from one of my blogging friends. I just bought a huge bags of onions (on sale at Target plus $1 mobile coupon) and can't wait to try it! She also has a recipe for caramelized crock pot garlic that I want to try too...

    The new slow cooker has arrived, so now I just need to learn how to cook in it. WFR, your london broil sounds yummy. How do you make it? And do you carmelize the onions in the slow cooker?

    I think dinner tonight is leftover baked ziti with Italian sausage, salad, and garlic toast.

    Tonight we are making pizza on the grill using a HT dough ball from the last sale, cheese from the last HT B2G3 event, and fresh veggies from Aldi. I'm tyring to use up all the perishable items in the fridge before we leave for vacation this weekend.
