What's for dinner Monday and weekly meal plan!

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas for what to make with all the great deals you have bought on sale recently.

Here's our meal plan for the first week back at school!


Green chili chicken and cheese enchiladas

The enchiladas are leftover from Sunday night and they were delicious! I used the Kraft green chili Recipe Makers sauce, shredded chicken breast, sautéed red pepper, mushrooms and onion and 4-cheese Mexican cheese. The kids and hubby both loved it!

FYI – I used the filling sauce from the Kraft mix for the inside of the enchiladas as directed, but I only used the Green chili sauce on the bottom of the pan. I did not cover the top of the filled enchiladas with it, as directed. It is a little strong and I didn’t think the kids would love that much of it. For the top of the enchiladas, I used a mix of light sour cream and Wholly Salsa and mixed them together. I spread a thin layer over the top and then covered that with more cheese. They thought that was the right amount of green sauce.

Wild rice

Sauteed squash and zucchini with a touch of parmesan

Warm chocolate chip cookies and milk to celebrate the first day of the new school year (Nestle Toll House on sale for $1.25 each with LF super doubles and coupon from!


BBQ beef sliders using London broil cooked in the slow cooker (on sale at HT and LF for $3.50/lb through 8/27) with honey BBQ sauce, garlic powder, pepper and onions

Macaroni salad with peppers, tomatoes, black olives, light mayo and McCormick pasta salad seasoning (it has paprika, celery seed and other spices that really make the mac salad delicious!)

Tomato and cucumber salad


Teriyaki tofu (Nasoya tofu is $2.39 at Harris Teeter - .75/1 coupon from when you join Tofu-U = .89 each and we use 2 blocks of tofu for dinner)

Sauteed veggies (probably sugar snap peas, squash, onion)


(We had this last week, but it’s always a hit and I need to use the tofu I have in the fridge)

Homemeade veggie pizza using HT dough ball on sale this week for $1 through 8/27

    Does a .99 cent margarita from the Mexican restaurant count as dinner? Maybe I'll add chips and salsa. It's going to be a rough week.

    Working on a new dish using beef tips (got a ton of meat for $30 w/the last Omaha Meat coupon, and the rest I have on hand), Pink Peppercorn Steak Skewers with a Lemony Garlic Cilantro Sauce... we'll see how it turns out ;-)

    I was a smarty pants and ACTUALLY planned my whole week out last night hoping to save time, money and frustration with school starting back this week. I have a daughter that started 6th grade and one that started Kindergarten today :)
    Here is our mealplan for the week
    (Monday - pulled pork from the crock pot, crowder peas and rice)
    (Tuesday - homemade chicken salad and chicken pastry made with chicken that I will cook tonight)
    (Wednesday - homemade pasta and meat sauce bake with garlic breadsticks)
    (Thursday - London broil in the crock pot shredded with potatoes, onions and carrots)
    (Friday - I have a party to attend so my honey will be left at home with the girls to do a "refrigerator cleanout/leftover night) (Saturday - chicken tacos with black beans and rice) (Sunday - Dinner with the fam :)

    I made a huge batch of pepper steak this weekend and had enough to freeze for 2 meals later. I also batch cooked meatballs for pasta or subs. Not sure what will be on the menu tonight.

    Mom2two - I do the same thing with chicken breasts that you do with ground beef. I batch cook a bunch and then put them in freezer bags in meal size servings. Some of it is shredded, some cut into cubes. I just did that this weekend. I love batch cooking and cleaning up only once but then having multiple servings of a meal or ingredient that I can pull from the freezer.
