    beef tips w/white rice & gravy, green beans and for dessert pull-apart-cake (monkey bread)

    We grabbed some heirloom cherry tomatoes at the Farmer's Market yesterday, so I've kind of committed to making big salads for my husband (I don't eat big chunks of tomatoes) for the foreseeable future. Not sure what we'll do for a protein, but a massive side salad (is it a side salad if it's big?) is on deck for the next 2 days at least. Have some kale I need to finish off, so I'll probably sauté that in some fat tonight, which leads me to think I'm making a pork product for dinner.

    We started our kitchen repairs this weekend so for the next 2 weeks we can only cook meals that don't need an oven or stove. The microwave, toaster oven, and crockpot can be plugged in in the living room if we really need them, but I'm planning on grilling every day!

    Tonight we are making foil packet dinners on the grill. The sausage was free from SD a few months ago and it's mixed in with potatoes, onions, squash, zucchini and carrots all from Aldi on sale or from friends' gardens for free.

    alwaysab, your quesadillas sound delicious! What a great idea. I might give them a try when I get back home.

    Last dinner at the folks' tonight I think will be loin lamb chops, sides TBD. Lamb prices are a lot lower here than they are in NC.

    I am thinking shrimp quesadilla using the leftover shrimp scampi from dinner last night. Throw in some onions and peppers, and Mexican cheese wrapped in flour tortillas. Probably serve with a side of rice and fruit.
