We had white chicken enchiladas. So yummy and easy!

So here it is, 5:54 pm and I have no idea what we are having for dinner! The horror! lol Been a busy day after a late night at the Big Time Rush concert last night so I just asked the kids what they wanted for dinner. They voted for pizza so I am headed to the extra freezer to fish out a frozen Palermos veggie pizza. I'll through in some Steamfresh broccoli florets on the side and that's dinner tonight. Pitiful, I know, but sometimes that's what needs to happen. Very thankful I have a stash we can turn to when needed.

I'll come up with a meal plan for the rest of the week later tonight.

jdouglas - I'm kind of doing what you did last night as far as easy dinners. And I like it! Your dinner tonight sounds great though.

Oxy - I also love homemade stuffing. We have it every yer for Thanksgiving.

    Thanks, Kat!

I don't know if this qualifies or not, but we sometimes eat out on Mondays because Chef's Palate (corner of 1010 and Kildaire Farm) has their delicious cheeseburgers + fries for $5. You have to order and eat in the bar, but it's a nice place, not wild. Wouldn't recommend taking little ones there, because you eat at tall tables/chairs and I haven't seen any tall boosters. :) But friends do take their tweens there, no problem. Big juicy burgers and yummy fries or sweet potato chips.

Tonight we're having what I was too tired to make last night: pasta with kale, chard, sausage, evoo, garlic & parm. We ended up getting takeout pizza last night. It must be 3 years since we've had takeout pizza! It was nice just to sit down and eat it without having to cook for a change.

Stuffed pork chops with homemade bread stuffing.

Homemade bread stuffing is one of my favorite frugal foods, taking what would otherwise be waste and turning it into magical nommy goodness.

    Salmon patties, salad, and watermelon.

Faye - 1 teaspoon chopped dill and 1/2 lemon juiced. Add away!

Bean burritos (.50 re-fried beans HT a few weeks ago), salad, saffron rice (free I think).

    Great menus tonight!

Kat - can I add your recipes to the database?

How much lemon juice and dull do you use in your Tzaziki?
