    I had about 8 lbs of leftover turkey. For lunch we pulled the turkey and added eastern bbq sauce on it and made bbq turkey sandwiches. Then for dinner I made turkey and dumplings. Tomorrow I plan on making a turkey buffalo dip!

    nakabi - no shame in a frozen pizza here and there. It happens to all of us. I did not make it to the store for the chicken so we are having sauteed Butterball turkey sausages with mushrooms and onions as well as the sweet potato casserole and broccoli. And WOW - 42 people is a big group!

    Gator Girll - those turkey sandwiches sounds delicious!

    no leftovers for us. All the food was eaten (42 people eat a lot lol). We put up the Christmas tree and decorations ( except for the Lenox dishes and outdoor lights) and I forgot my family expects food..sooo frozen pizza! !! Terrible I know but sooo easy!

    I'm boiling down the turkey carcass to make stock. I'll probably make some turkey vegetable soup tonight. We had turkey sandwiches (with Miracle Whip, cranberry sauce, and lettuce) for lunch today along with some leftover apple and celery salad.

    RFB - the carrot recipe sounds wonderful! And yay for fresh sweet potatoes!

    Since we went to my Aunt's house for Thanksgiving yesterday, we don't have leftovers to enjoy today (other than the extra coconut custard pie I made - yum!) so we are having rotisserie chicken, sweet potato casserole and steamed broccoli...... and coconut pie for dessert!

    All we have left is 1/2 of our grilled turkey breast (YAY for good planning!) So tonight we'll have that, and I'm going to roast up some Brussels sprouts plus some sweet potatoes that my DH got straight out of the ground from a client... I see many sweet potato side dishes in our future :-)
