What's for dinner Friday? Anything special for Valentine's Day?

Posted February 14, 2014

Heart pancakes for Valentine's Day

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?  Are you doing or cooking anything special for Valentine's Day?

Since we will have a leisurely morning with no school tomorrow....again, I will be making the blueberry heart pancakes you see above for the kids for breakfast with a side of turkey bacon.  For dinner, we are having take out Japanese, per the request of my little people. I'll provide the drinks, salad and dessert at home. I am making a lemon bundt cake with a cream cheese lemon glaze for our Valentine's dessert.

We ended up getting burgers from Wendy's. I did grocery shop after work and even picked up steak and shrimp (the boys like shrimp) but my oldest ended up working until 8 so we are going to do the steak and shrimp sometime this weekend instead.

RFB - that sounds wonderful! Good luck on the contest! I predict a future blog post with this recipe from you. :-)

hollyh515 - we had California roll sushi with our Japanese food tonight. Yum! Enjoy your dinner. :-)

Couldn't resist an update... if you haven't tried making lasagna in muffin pans with wonton wrapper, you've got to try it! I just made the most interesting recipe with chicken, wonton wrappers, canned tomatoes, white beans, fresh spinach, chicken broth, some really yummy spices, including a creole one... plus mozzarella cheese! I'm going to enter this one in a chicken appetizer recipe contest I saw yesterday... wish me luck!!!

I've found you can pretty much put anything in these, plus the wrappers defrost really quickly from the freezer which is a nice time saver.

It's really hard to pick whose dinner menu I like the best -- they all sound wonderful! Happy Valentine's Day everyone.

No clue for dinner. As usual. ;)

Nakabi, my dinner is almost exactly the same except we are having blackened chicken breasts, steamed broccoli and fettucini alfredo. We are also having Sister Shubert rolls! Too funny! Oh yeah...and brownies with ice cream!

Faye- what a cute tradition for your daughters... they'll be so surprised that you were able to shop after all!

And what fantastic meal ideas for a special day! We're doing our celebration dinner tomorrow night instead, with the filet and lobster from Earth Fare- yay! So, tonight, I'm going extra thrifty, and using what I have on hand! Lasagna Petals with shredded chicken, marinara sauce, fresh spinach, cottage cheese (we still go old style some times lol!) mozzarella cheese, layered in muffin pans with wonton wrappers instead of noodles.

Losltp- I'm with Faye... yum! And on the potatoes, have you ever tried salt roasted potatoes (a good recipe if you got the kosher/sea salt from months back that was on markdown- I still have about 3 in my storage). They are so delicious and easy. I've made them before with prime rib :-) Here's the recipe in case anyone wants to give it a try sometime. http://www.foodnetwork.com/recipes/melissa-darabian/salt-roasted-potatoes-recipe.html
