    Sandra Lee is my favorite!! I always use her way of cooking!!! The recipe I posted below - I certainly did not follow to the t. I usually find a recipe for inspiration and then go to Sandra Lee route. It really is the modern way!

    I'm not really a cook, but I'm trying to do the Sandra Lee version of putting together things that just need a microwave or a stove top to finish it off. Anyway, I tried something that turned out so well, I just have to brag! I had seen a recipe in a magazine, but it seemed way too complicated, so I decided to wing it with what I had on hand. I had a marked down package of Buitoni mushroom ravioli ($2), a lemon ($0.50), 2 pats of butter (??), 2 Tbsp olive oil (??), salt & pepper (??), 1 Tbsp shredded parmesan cheese, some spinach from salad bar ($0.73). The pasta pkg said bring 4 qts salted water to boil, add tsp olive oil and pasta, boil for 5 minutes. I sliced up the lemon in thin rings, put butter, rest of olive oil, salt & pepper & cheese in bowl, heated in microwave a minute or two to melt everything together, then mixed in the pasta topped with spinach. It was delicious!!! I had enough for 2 meals! I've made this again and heated the topping in a skillet instead of the micro.

    The second half of the fried shrimp and flounder with redskin potatoes and broccoli I ordered LAST night at work, after tonight's shift. The struggle is still real!

    I've been sick with one thing after another for over a month now so I've been MIA. We are lucky most nights if I get everyone fed ;-) Tonight I think we will have chicken quesadillas with the leftover rotisserie chicken from earlier this week and fruit on the side.

    Enjoy your trip to DC Faye. Ascherer, I'm glad to hear that your Mom is doing better. Tonight I'm cooking the other half of the turkey sausage, peppers and onions. Going to stay in as much as possible this weekend. Even though I need to get out in the yard and pick up tree limbs that are everywhere from the bad weather we've had lately.

    ascherer - Thanks! I am already all over the snack stock up. I've been to DC multiple times and definitely remember how much stuff costs. Like being in the airport! lol So good to hear your mom is doing well. It's because she has such awesome care from her daughter!

    Faye - Momma is doing well. Still has some pain and the PT is causing sore muscles because they want her putting weight on that foot. Even with that, we are laughing a lot and having as much fun as we can. I'm enjoying getting to cook for her and shopping in her freezer. Thanks for asking.

    Enjoy the trip to DC. I recommend packing some snacks and water bottles/refillable bottles. Even a 16.9 oz water cost $2 to $4 in places around DC. On the positive side, there are CVS' all over the place in the city.
