    Dear BarbieDoll1967 - Logging in for the first time in a long time due to attending family caregiving needs, I was deeply saddened to hear of the passing of your dear neighbor-friend, your husband's sickness, and your especially rough week. My heart goes out to you! ... lifting you in prayers and sending you a much deserved hug (along with soul-warming, hot-chocolate-wishes). May God deliver an angel to the steps of your neighbor-friend's home to be a comfort to you and the family. Blessings to you all and may your hubby soon be restored to health!

    Another menu change- Forgot I had whole deli chicken from last week in fridge. Having that with baked sweet potatoes and spinach with microwave chocolate mug cake since it is National Chocolate Cake Day!!

    barbiedoll1967 - I am so sorry about the loss of your friend. Chocolate seems like the appropriate dinner considering the week you have had. Make it Nutella on some whole wheat and you can pretend it's even sort of healthy.

    JDouglas, that sounds very much like my stand by recipe for beef veg soup :) Instead of pasta, I usually add a little barley. It is always delish & hardy !

    I am still trying to decide. Normally I don't cook on Friday nights since hubby plays poker. But since hubby is still sick, no poker for him tonight. I lost a dear neighbor friend and his funeral is this afternoon. It's been a bad week. I think I'll skip dinner and go straight to the chocolate!

    YBaverage, I saw an interesting recipe yesterday on Pinterest for hamburger soup -- basically hamburger (of course) with various veg, a can of tomatoes, and some beef broth. You could probably use chicken or veg broth too. It had a little parm sprinkled on top. If you got the weekend EVIC for ground chuck for $1.99/lb, and added some of the Aldi veg, you could have a huge pot of soup for very little money or time.

    Actually, that soup sounds pretty good -- maybe we'll have that for dinner. I like to add a little pasta to my soup as well, so maybe elbows or small shells.

    I am making homemade veggie soup with all the great deals I picked up at Aldi yesterday. I'll add some pasta shells to it and a side of rolls and that's dinner.

    ybaverage2003 - we are on the same soup kick. If you have an Aldi near you, there are great buys on celery, carrots and onions.
