    Tonight's dinner is on cookies lol just kidding. Really no idea. I've been baking all afternoon and I'm doing one batch of pb cookies and one batch of sugar cookies so not sure that myself (or the oven) can take much more work :)

    Coupon4me- I'm sorry your recipe didn't turn out the way it should have. I'm not the fish cooker of the house, thats DH's job (so we don't have it too often lol) and I'm sorry I'm not much help.

    Faye I'm with jdougas could it be that you are saving room (calories) for some of those magical oatmeal raisin cookies???

    COUPON4ME- I understand how you feel! On Sunday I bought 2 lbs. of ground turkey at FL, and Monday when I went to use it, it was all brown (and it still had 4 good till days left :( Must have been mismarked. Such a bummer! And even more of a bummer that FL is so far away, or I would have returned it. I'm sorry your recipe wasn't good. We ended up eating cheese and cr*ckers for dinner lol!

    Tonight is Balsamic Mustard Thyme Pork Chops, Roasted Baby Potatoes and Broccoli.

    Last night my sweet wife ventured out in the dark and braved the deer to get Chinese for us after I baked cookies all afternoon. I have no idea what's for dinner tonight yet.

    Coupon4me, so frustrating! I hate when good ingredients get wasted on a yucky recipe. My go to white fish filet recipe is similar to Meredith's - line a sheet pan with foil and parchment, add the fish, top with a smear of mayo (trust me on this), season with garlic powder, top with a mix of breadcrumbs and parm. Bake at around 400 till done. Really good! I think your reward for your efforts should be dinner out tonight! :)

    I'm thinking tonight's dinner will be leftovers. We have rotisserie chicken, mashed potatoes, roasted green beans, chicken shepherd's pie, beef enchiladas, penne with meatballs, chicken alfredo, and who knows what else. Salads and grapes to go with it.

    Coupon4me, I hate when new recipes let me know. My new favorite way to make "fried" tilapia is from a recipe I found on Pinterest a few months back. You mix breadcrumbs with Italian seasoning and grated (powdered) Parmesan cheese and butter. Coat the fish in the breadcrumb mixture and bake until done. The outside gets nice and crispy and the parmesan cheese really compliments the flavor of the tilapia.

    It's chicken breast with sauteed veggies for me tonight. I'm also serving mashed potatoes and crescent rolls for the rest of the gang.

    coupon4me - oh - that's a bummer on the tilapia recipe! It's so disappointing when a new recipe does not live up to the expectation. As far as inspiration, I'm not much help. LOL I'm still trying to make up for the Thanksgiving over-indulgences to I'm cooking light these days.

    No inspiration from me. The family is having leftovers as I'm taking my best friend out to dinner for her birthday before we hit a holiday craft sale. Carolina Cafe is taking care of me :)

    I'm needing inspiration today! Monday and Tuesday I had it all planned....good meals! Wednesday was pizza with baby carrots...ok but last night was a disaster. I saw a recipe for oat crusted tilapia and had all the ingredients to make it along with homemade tarter sauce. Gross! It was edible- my DH and I ate it but man was that disappointing. I had it with spinach and avocado. Oh boo!

    So if your menus look blah too I'm thinking it is a skip cooking night and go out to let someone else take care of me today :). TGIF!!!
