    Thanks, Meredith -- that's very helpful. I usually don't think that far ahead to pull something to defrost leisurely in the fridge, so it's good to know that you microwave them with good results. I'll have to do some batch cooking and get some soup in the freezer for nights I'm not in a cooking mood... like tonight LOL! ;) I like to have some homemade yeast rolls or bread on hand that I can heat up to have with the soup. Feels a little more special then.

    JDouglas, we freeze almost any of the soups we make and haven't had any issues. Recently I've frozen chili, loaded potato soup, butternut squash soup, vegetable beef soup, split pea soup, corn chowder, and broccoli cheddar soup. It's best if you can thaw them out before you need them in the refrigerator for a day. However some times, like tonight, I pull them out of the freezer and just microwave them. The liquids separate in the thawing process and the soup looks bad but once you stir it and heat it they look just fine and we can't taste a difference from fresh. The only type I've made so far that I haven't tried freezing is beef stew because I think the vegetables would all end up overcooked by the time it was reheated.

    No idea for us tonight...it's actually been a good week of meals so I'm leaning towards the leftover / hotdog / cereal whatever kind of night! TGIF!

    Meredith, glad you're feeling better, but sorry about your DH. What kind of soups do you freeze that hold up well?

    I felt like having M&C last night, so decided to share. ;) I added broccoli and cubed ham, both of which were sautéed a bit first. Tonight might be FFYS. There's enough M&C left for me LOL. Really hoping I find some time today to make the pie I've been wanting to make all week. I made the pie crust -- it is in the fridge ready to roll out. Just have to get the rest of it done.

    P.S. A little OT, but in case any bakers are reading this thread today, King Arthur Flour has free shipping this weekend only from now through Sunday on any of their parchment paper. It's a great time to stock up. I also like to use parchment over foil for sheet pan dinners. It makes for super easy cleanup, and the parchment keeps the food from sticking to the foil. I also use the parchment under pizza. Keeps the cast iron pizza pan clean and the pizza easy to slide onto a cookie sheet.

    I am finally starting to feel human again! My head and throat still hurt but the mental fog has lifted. I was however nice enough to share my illness with my husband so now he is out of commission. Since he cooked for me all week I will cook for him tonight. I think I'll jump on the grilled cheese and soup bandwagon from yesterday. We have lots of homemade frozen soups in the freezer as well as a stash of canned soup in the pantry so we have plenty of flavors to choose from :-)

    twinredheads - what a lovely menu. Have a nice visit with your in-laws.

    Tonight we are having either breakfast for dinner with French toast, eggs and fruit or shrimp fajitas. I'll decide when it gets a bit closer to dinner.

    Ahi tuna steaks, asparagus and lemon noodles. That is, if my in-law's arrive in time for dinner from Ohio. If not, will save it for later in the weekend.
