We ended up having another meal from the freezer in my quest to complete the pantry challenge this week. I made frozen breaded chicken with BBQ sauce cooked in the oven and Green Giant rice, cheese and broccoli.

I did have one night this week where we got subs at Sheetz (using gift card from Swagbucks) but it was a sanity saver and worth it.

All and all, it's been a successful pantry challenge and I plan to continue it through the weekend.

Thanks for sharing your Friday menus everyone!

We've been up since o'dark thirty this morning -- it was actually still dark out -- and spent the day at a loooong doctor's appointment, so I'm beat. Tonight is going to be sandwiches for dinner depending on what I can scrounge up. Plan A: NYC deli-style fried egg and bacon sandwich on a buttered Kaiser roll. Plan B: grilled cheese sandwich on sourdough bread. Plan C: tuna salad on sourdough toast. Plan D: burger on the grill on a Kaiser roll. I have one lonely tomato which may or may not get added to said sandwiches. No sides. No dessert. Hey, at least I'm serving something for dinner! LOL :)

We are eating with my in-laws for dinner tonight. I don't know what restaurant we are going to but I definitely won't complain about no cooking or cleaning :-) It's a nice start to the weekend!

YBaverage- that is a great reminder. I haven't been there for years, and love that they're open every day. Thanks!

RFB, I shop at the big Raleigh Farmer's Market off Lake Wheeler Rd. It is open all week, but I usually go weekend mornings. I always overbuy and even though some of the prices seem a little high, the produce is so fresh, it lasts longer than anything I buy at the store.

Thanks YBaverage, Faye and Raesmom! I ended up eating one a bit early. I also added a sliced hard boiled egg on it, and it made even more delicious! Those flatout pizza crusts are really good (and can't beat 10 cents each!!)

And any tips on farmers market shopping? There is one by me in Cary, but it seems much more expensive than the one in Wake Forest where we used to live. And the pricing is often different as it's often by basket or quantity rather than a per pound price.

    Digging not sighing (silly phone!!)

Yum on that pizza RFB!!! My lunch today is the last of the pasta and sauce.

For dinner tonight I'm gonna let Rae pick. She has a half day today so I'm letting her stay home so we will get dinner started some time this afternoon. No more pink cupcakes so maybe we will do cookies tonight for dessert. Found some Pillsbury chocolate chip break and bake cookies in the freezer (thanks to the pantry challenge I've been sighing in there a lot this week lol)

    Happy Friday!!!!
