    AWE MAN JDOUGLAS!!!!! That roast with mashed potatoes and green beans AND mushrooms has my name alllllllll over it!!!!! LET UP RAIN LET UP lol enjoy your chicken.

    I pulled out ground beef but I am soooooo tired (maybe the rainy day) all I want to do is have a glass of wine and take a nap!!!! Let me figure out what im gonna feed my family. I'll let yall know later.

    I am avoiding the traffic that will be I-40 by staying in Raleigh after work. I packed a sandwich and chips to eat after work and then am running all my errands. I'm hoping the rain will keep most people home so the stores will be fairly empty and I can get everything done :-) Maybe by about 9pm the traffic will be cleared up enough that I can drive home in the storm.

    jdouglas13 - you may want to check the weather. I think you are having breaded chicken. :-) But it should let up by tomorrow morning so maybe roast beef for dinner tomorrow?

    Well, if the rain lets up and I can get to the store without getting soaked, we are having a little roast beef with gravy (eye round roast from the freezer), mashed potatoes, and green beans with mushrooms.

    Plan B, which is looking more likely, will be breaded chicken cutlets, tomato/mozz/avocado and basil over lettuce salad with a balsamic vinaigrette, and roasted squash or rice. This menu only requires about a minute out in the rain to pick some fresh basil.

    Chocolate chip cookies I made yesterday for dessert.

    Tonight it is soup and salad night. I picked up some delicious tomatoes and cukes from the farmer's market yesterday so we are having tomato, cucumber and provolone sandwiches on wheat bread with a side of Trader Joe's organic creamy tomato soup.

    RaleighFoodBlogger - I totally agree about Dave Ramsey and recommend him at most classes! Thanks for the heads up on the app. I’ll definitely check it out. And many libraries have Total Money Makeover for those who want to read it for free.

    Today we're having leftover steak and beans from yesterday's Martha and Marley Spoon Box. The beans were so delicious. Just 2 cans of pinto beans added to a chopped and sauteed onion. Then add 2 Tblsp. grainy mustard and salt and pepper. The combo was so simple but perfect- and will be good for a frugal recipe in the future. We won't be seeing steak in our near future, so we will be savoring every bite :)
