    Raesmom, if you want to cook a whole chicken on the grill, you should cut it in half or spatchcok it first, otherwise you won't be able to cook it evenly. It's a tricky thing to grill.
    Here's an article I found on it. The picture also shows a spatchcoked chicken (backbone/neckbone removed, chicken flattened). (Note the sensor got me -- it's got a c before the k if you need to do a search).

    Faye, it is nice to do some real cooking again in our new bigger kitchen :-) I can't wait until a few more weeks when all the boxes are gone and we're really settled so I can get back to making lots of new recipes!

    We'll be having crockpot fiesta chicken - diced tomatoes, corn, black beans and chicken with a seasoning packet. All that will get stuffed in a taco shell and I'll call it a night. Some avacado on the side.

    raesmom1612 - I can assure you that I do not love 5:45 am. :-) And I am so excited for Rae! I hope she loves school!!

    I have never cooked a whole chicken on the grill so someone else will have to chime in on that one. I always cook mine in the slow cooker or the oven.

    Thanks for the whole chicken reminder jdouglas!! While I was at HT for triples last week I found a small whole chick (maybe 5lbs) on sale and picked it up for the freezer stash. I was gonna save it for the fall, but with all if these hot no oven days that might be a good one to have DH do on the grill with some bbq sauce maybe??

    Wow Faye!!! I haven't seen 5:45 am since baby ziti was first born!!! LOL good luck this school year to your girls. We are taking Rae school shopping this weekend, she is on pins and needles and cant wait to meet her teacher :)

    jdouglas13 - We are back on early schedule since my oldest started her full class schedule on Monday. So I was up at 5:45 am. :-(

    lindabates - I hope you feel better very soon!! At least the kids and hubby can fend for themselves.

    Well I'm dealing with a cold so no cooking for me today... I'm in the mood for comfort food.. guess I'm gonna grab some Soup the kids and hubby can fend for themselves.

    I just wanted to thank everyone for the suggestions yesterday. I ended up making this recipe and adding squash and vidalia onions and it was amazing.

    Trifle! Thanks Meredith! :) The trifle didn't get made yet, but I see it, for sure, in our future. Your pork loin sounds good. I have to get on the BBQ train soon after reading about everyone's BBQ meals this week.

    Faye, I can't even imagine what time you were up this morning to get all that cooking/baking done by 9 am! I can't even look at food in the morning without at least a couple of cups of coffee in me first. Call me the night you are making the breakfast casserole... we'll be over for dinner. ;)

    I have a few contenders for dinner tonight. One might be a whole chicken (on sale from FL). I'll throw it in the oven and fill the cavity with rosemary, a quartered lemon, and a head of garlic sliced in half horizontally. Gnocchi and broccoli as sides. The other possibility is a steak salad with the leftover London broil.
