I have been so busy this week I can't even remember if I have posted since Monday and Tuesday....
Wednesday night we had grilled london broil with brussel sprouts and roasted garlic potatoes.
Thursday was a fend for yourself night because the kids were at the grandparents!
Tonight is griilled chicken marinated in Italian Dressing, Broccoli slaw with baked beans.

Raesmom, you will love the result baking with Greek yogurt. It's like baking with buttermilk. It acts like a tenderizer so the crumb is really light and moist, and it adds great flavor. Let me know what you think.

Our dinner is super boring tonight. We ended up with fend for yourself last night because I just wasn't up to doing anything, so tonight will be the leftover meatloaf and sweet potatoes. My big cooking plan is to make The Princess some fresh green beans, although she'd be just as happy with them raw.

I'm craving something for dessert, as I usually do when I'm under the weather. I would love some of my oatmeal cranberry raisin orange walnut cookies. Mmmmmm. LOL

raesmom1612 - YES to those raspberry/Greek yogurt muffins! Yum!

ybaverage2003 - your flautas sound great!

It's just me for dinner tonight so I am probably having a salad with a veggie burger on top. Nothing exciting, but it gets the job done. LOL

Trying a new recipe for chicken & black bean flautas. Have leftover cooked chicken from the lasagna roll ups. The rest of the ingredients I have on hand in the pantry & fridge, so easy to throw them together !

So I have been super lazy this week and dinner has been a mixture of sandwiches and frozen pizza. I guess I can go ahead and make a real meal tonight. We are having BBQ boneless pork chops with either mac and cheese and veggies or yellow rice with beans. I picked up a box of raspberry muffin mix that calls for a cup of Greek yogurt so Rae and I are going to give those a try. Happy Friday!!!!!
