    Nanee Lion that sounds good! We may have homemade pizza tomorrow night. Thanks for the idea. I have been making tortilla pizzas on the skillet lately. It's really easy, lower in fat and calories than most regular crusts and the kids really like them.

    I was happy that my youngest was all over the roasted sweet potatoes and mushrooms at dinner tonight. I doctored the BBQ chicken and made an easy buffalo chicken dip with cr@ ckers to serve with salad and roasted veggies. It was very tasty.

    Dr D - thanks for the coconut oil info. I'll look for the Spectrum coupon. I bet it would be good on roasted veggies. Speaking of which - time to turn on the oven!

    Faye, yes, do get some coconut oil! You could melt it and use it on your roasted veggies as an alternate to olive oil (either oil is great). I think I saw a $2 printable on coupons.com recently for Spectrum coconut oil, which would bring the price at HT during SDs down to a more reasonable amount without a sale. Or Aldi sells a small jar for about $5 if I remember correctly. I bought a giant jar at Sam's last year while I still had a membership, so I'm still working my way through that. You can also melt coconut oil and use it as a substitute for veg oil in baked products. :-)

    twinredheads - I really need to pick up some coconut oil. So many health benefits and I bet it tastes great with shrimp. Thanks for the idea. Let us know if you come up with something spectacular for your shrimp. :-)

    Thanks for the feedback everyone! I usually sautee them in garlic and coconut oil and serve them on salad greens but I wasn't sure if I wanted to do that again. Lots of great ideas; I'm sure I will be using one of them :)

    I decided I'm having my BBQ chicken with roasted veggies tonight (sweet potato, mushrooms, onion and carrots). Everyone else can have their BBQ chicken with salad, on a tortilla, with roasted veggies or any want they it. It's now officially fend for yourself night! lol

    jdouglas13 - shredded BBQ chicken is delicious on a salad! When I got home from my eye appointment at 1 today, it had just finished cooking. The house smelled divine! Guess what I had for lunch? LOL I'll find something else for dinner, maybe. Or just have it again. :-)

    twinredheads - I'm not very creative with shrimp. I usually just saute' it with a touch of olive oil and lots of garlic and pepper until pink and cooked through. The nice thing about shrimp is it cooks so fast.

    ybaverage2003 - we have strawberries for dessert as well. Maybe I'll put them on my sherbet....

    Twinredheads, I like to cook shrimp on the grill with basic spices. Then once I pull them off the skewers I either use them for shrimp tacos or to top caesar salad. If I don't cook them on the grill then I'll use them to make stir fry.

    Raesmom, your DH definitely owes you BIG. Like a paid babysitter big and dinner at Angus Barn big LOL. Do not even go in the kitchen this weekend! ;)

    Twinredheads, shrimp on Caesar salad? Shrimp sautéed with shallots, a LOT of dried basil and tarragon, a can of crushed tomatoes, a glug of white wine, and finished with enough half and half or heavy cream to turn it a nice salmony pink color and served over angel hair? Lemon and garlic shrimp and asparagus or broccoli served over or mixed into rice?

    Faye, I wouldn't have thought to combine BBQ chicken over a salad, but it sounds really good. Meredith and YBaverage, your menus sounds really yummy too.

    I think tonight we're having either homemade sausage and mushroom pizza or leftover antipasto/pesto tortellini, which was delicious!
