Usually I season my meat with either Panko or regular bread crumbs, an egg, adobo, chopped onion and green pepper (or if I'm being lazy I pour a bit of jar salsa in the meat), and some other spices (oregano, parsley, basil, Italian seasoning etc.). Mix it all by hand. Then I get a handful and put my thumb in the middle and fill the hole with cheese (going to try cheddar today bc I dont have mozzarella on hand). Close up the hole and put them on a cookie sheet and pop them in the oven (350 for 45 mins). Once they are done I lay them on a paper towel to drain and throw them in my sauce and let them simmer together for another 30-45 mins on the stove. Serve with pasta. Hope that helps :)

Ooooo, Raesmom, I have to make those cheese stuffed meatballs. HT has ground chuck for $2.77 and fresh mozzarella (Palizzo or something like that) BOGO this week, perfect for the meatballs. Any hints to making them?

Faye, enjoy your time out with your youngest. I vote for dinner out myself, although we did have shrimp and pasta alfredo with asparagus earlier this week and it was very good.

Not sure what we're doing for dinner. One minute I look outside and it's beautiful and I think hamburgers on the grill. The next it looks like rain again. I guess I'll see when the time comes.

In the meantime, I do have some cooking chores to do -- making biga for the next batch of rye bread, and since I'll already have the breadmaker out, pizza dough for one night early next week. If I were a good spouse, I'd do some baking and make dessert -- something I haven't done in forever.

    What's everyone else up to?

With the wet weather I'm thinking chili tonight. It's DH's favorite and last time I made it he was away. It's either chili or homemade cheese stuffed meatballs and sauce (so that Rae and I can have some kitchen time) Guess it depends on how much free time I get from baby ziti. Brownies for dessert.

Enjoy your time with your baby girl Faye!!

Dinner is up in the air tonight. My youngest and I may be going out to dinner or we may do it this weekend. If we are home, we are probably having shrimp and pasta alfredo.
