    Ascherer, I'm not a fan of boxed M&C, but your suggestion was very interesting and gave me a great idea on how to make it that won't traumatize DW LOL. Thanks! :)

    Jdouglas - you can always do the college version. Make a boxed Mac & Cheese and add the tuna in right before eating. Thus no cooking the tuna. ;-)

    Ascherer, I love tuna noodle casserole! Sadly, even the smell of cooked tuna is more than DW can handle, so it is a very rare treat, since we're both retired now, and she doesn't travel for business anymore.

    Raesmom, glad your DH will be home. Eat those brownies while the getting is good! LOL ;)

    Faye, so sweet of your kiddo to compliment you on your meal, especially with all the veg!

    Last night we had spaghetti and sausage and garlic bread at DW's request.

    I have a HT whole chicken ($0.89/lb sale) in the oven. I put half a head of fresh garlic cut in half, a quartered lemon, and some fresh rosemary in the cavity. Sides will be roasted asparagus (HT $2.99/lb), rice, and mushroom gravy. I'm also hoping to make some broth and soup with the leftover chicken tomorrow.

    Last night Rae and I had Chinese food and brownies thanks to two very special smart shoppers ;) thanks again y'all

    Tonight DH is home for the weekend so I put some chicken breast in the slow cooker to make creamy Italian slow cooker chicken served over rice. Might throw some peas or carrots in there just for some color and some veggies. Leftover brownies for dessert.

    Last night's soup turned into chicken and veggie quesadillas at the request of the teenager. So tonight's menu is leftover beef stew from Monday night with grilled cheese sandwiches and salad and fresh fruit.

    twinredheads - sounds tasty and healthy to me.

    Tonight we are having veggie soup Day 2 with sides of rye bread and fruit salad (red grapes, clementine segments and blackberries). Last night while my youngest was eating her soup, she told me it was her favorite homemade meal. It was so sweet. And for a teen to say she could eat homemade veggie soup every day is pretty astounding.
