Tonight was going to be pizadillas but we got invited to a birthday party for tonight so we will be having way too much Peruvian and Mexican food instead :-)

Yes, the kalettes were at Kroger, in a clear plastic bag in the produce dept. Waaay too expensive at full price, but ok on clearance. I'd never heard of them before either. Tiny little kale buds.

DrD, I had to look up kalettes. I'd never heard of them. They sounds wonderful, ESPECIALLY roasted! Where did you find them? Kroger as well?

Maybe we live near GATOR GIRLL - our power was out yesterday evening as well - came back on at about midnight. Never heard what caused the outage.

YAY for roasted veggies - YUM. Every once in a while, I've found cut up butternut squash cubes on clearance at Kroger or HT - that's when I feel like I've found a real deal! A few weeks ago I also found some kalettes on clearance, which I'd never tried before, but they were awesome roasted with some EVOO, salt, pepper, oregano and cumin. :-)

Gator Girll - so glad you already had the meatloaf and taters finished before losing electricity. And hopefully it was no off for too long.

Jdouglas - if the roasted veggies weren't polished off for lunch a few minutes ago, I would have put them on the pizza. That sounds like a great idea for next time. And they were so delicious again today that I am planning on making another pan of them tonight. I officially have a roasted veggies addiction. And I am glad you are doing better today after the reaction yesterday.

Last night our power went out about 10 minutes before dinner was ready. I had meatloaf and mashed potatoes ready but didn't get a chance to finish the honey glazed carrots. Tonight I'm having meatloaf sandwiches with a tomato florentine soup recipe that I got from Krogers. Tomorrow I think I'll finish the carrots along with a chicken and pasta dish and spinach salad.

Faye, you should use some of your leftover roasted veg on your pizza. They look great. Love sheet pan anything.

We ended up having spaghetti carbonara last night because I was afraid to eat shrimp after, yet again, another random anaphylactic reaction to an unknown allergen. At least we were at the doctor for DW when it happened.

I don't think we'll have the shrimp tonight either, but maybe we'll have grilled chicken with the Caesar salad. I have two packages of romaine hearts I need to use up.

garnertoy and JustMe83 - I love both of your menus today! The caravan will be busy tonight. :-)

I made roasted veggies last night and they were sooooo good. Looking forward to the leftovers with lunch. You can see the photo of the veggies in the post today.

Tonight we are having veggie pizzas with a side salad.
