    I don't usually cook on Fridays :) but just wanted some fried Catfish so that' what it will be! Not sure what the sides are yet.

    Jdouglas- I agree on the broth. Most have so much sodium (even the low sodium ones). Pacific seems to be quite a bit less. I'm using some tonight, in fact! :-)

    RFB, thanks for the link to the recipe. I pinned it. I love that kind of soup -- simple, but so very good. I noticed that Earth Fare has Pacific broth BOGO. When I don't make my own broth, Pacific is my #1 go-to. They are very generous with coupons as well.

    Tonight we are having leftover chicken salad and buffalo chicken dip. Sides of pasta and green beans.

    Jdouglas- It will be similar to this recipe but with the sausage and asparagus replacing the chicken and spinach. It's super easy.

    Last night I made an interesting concoction that DW really liked. I'm all about "sheet-pan" dinners lately, and this was one. I roasted fresh broccoli with garlic, EVOO, seasonings, and a couple of sliced lemons. When the broccoli was cooked, I added cooked shrimp, cut up fresh tomato, more EVOO and a little parm. Cooked just until the shrimp and tomato were warm. Served the whole thing with rice. It was so easy and so good. I have been lining the sheet pan with foil, and then topping the foil with a piece of parchment paper, because I don't like the flavor when foil comes into contact with acids like tomato or lemon. Super easy cleanup, too.

    Tonight is going to be leftover buffet. I had quite a bit of the shrimp dish left, and a bit of pasta in sauce too.
