    Thanks Faye - now I cna look up more recipes !
    I guess what I am making are enchiladas instead of chimichangas since they are baked not fried
    I did not know what either was - DH had just remembered "chimi" from the restaurant menu ! LOL
    They smell terrific .

    We are looking for new meals to try but many of the mexican dishes are high in carbs and salt which we have to avoid .

    Tonight we are having baked chicken, sauteed zucchini, squash and onions & baked potatoes.

    observant - I have never made enchiladas but that recipe looks good.

    Nakabi - what a sad story about the 14 year old. My heart goes out to her.

    Date night, Shrimp and crabmeat chowder, seafood from HT on sale and marked down, Leafy green salad, Kroger 99cents lettuce that were huge, LaBrea sourdough free HT, and a Peanut Butter /Chocolate bar starts with a Krusteasz mix from HT during holidays. Nice Barefoot wine on sale HT and decaf. from HT sale. This entire meal which will be served more than once probably cost about $22.

    I picked up some steak at FL this morning that was reduced to sell. 8.43 for 2 nice sized NY strip steaks. I'll take it. Baked potatoes and salad or green beans to round it out.

    chimichangas for first time ( We want to try to make them at home)

    not sure of sides - veggie mix , rice or corn ??
    fruit - maybe grilled peaches, bananas ?
