Dr D- that is awesome! They had something similar to that on The Kitchen last Saturday too! They also make lemonade out of the last of honey, and peanut butter oatmeal out of the last of a peanut butter jar :-)

Nearing the end of a bottle of Dijon last weekend while making some honey mustard marinade for chicken, I Googled "how to get the last bit out of a jar of mustard" just for kicks and found this ingenious and simple idea for a mustardy vinaigrette dressing:

I actually do eat a huge salad for either lunch or for dinner nearly every day, and actually miss them on the rare days that I don't have one. I prepare several at a time in 4 cup containers with lids, using fresh ingredients, twice per week, and find that if I don't add dressing until just prior to eating, they'll stay nice and fresh in the fridge for 3-4 days.

I'm on my own for supper tonight which means leftovers are most likely. Bbq chicken leg, broccoli, and pasta salad with whatever fruit is in the fridge. Then I think I will go to the gym for a couple hours since I'm on my own :)

Nakabi - Have fun tonight! Sounds like a rocking pizza party. I hope you get some sleep. lol I like your idea of adding roasted and grilled veggies to your salad.

RFB - your steak fried rice sounds delicious!

    Veggie pizza sounds good Faye.
We have a lock in at one of the colleges tonight with our youth so I'll be ordering 70 pizzas from Papa Johns. You would think the youth would get tired of the pizza but apparently not. I had a huge salad for lunch (spring mix, kale, carrots, craisins, onions, capsicum, olives, grilled mushroom, roasted cauliflower and brussels sprouts, chia seeds with a honey/lemon/Dijon mustard dressing). I figured I better get some healthy food in me to counter act all the calories in the pizza and snacks lol. How I do LOVE salad though!! I could eat it every day!

Tonight we're doing steak fried rice with leftover tri tip. We do this at least every week or two, but it's super easy and yummy!

teecee - the kids are pretty happy about pizza and fruit salad, too. :-)

Faye - I would rather have your pizzas but need to use up the leftovers . LOL

Teecee, we already had chicken tacos once this week, but I would have them again tonight if I still had more leftover chicken! Both your dinner choices sound yummy.
