    nakabi - how fun!! You are so kind to host such a big gathering for the kids. And I am sure they will enjoy the hot dogs and burgers as much as the treats. :-)

    RFB - your casserole sounds tasty!

    Tonight we are having veggie pizzas (mushroom, spinach and onion) with sides of asparagus (last of the $1.99 sale at HT last week) and Mandarin oranges.

    Nakabi- the yogurt could replace cream or sour cream. I've also used cream cheese and evaporated skim milk as sauce bases. Most casseroles contain much more fat, but you can achieve a nice taste with yogurt. I also use yogurt in one of my quiches, which also makes it less fattening. And fun on the bonfire :-)

    RFB- is the Greek yoghurt in place of the sour creme found in a lot of casseroles? I don't eat them and haven't ever made them, but I do like the ide of brown rice. I'm sure you could also make it with quinoa. Let us know how it turns out.
    Tonight we are having all our youth from church (45) over for a bonfire and to hang out. We will roast turkey hotdogs, grill venison burgers, make smore things (no chocolate for me), hot cocoa, apple cider, snickerdoodle cookies, and strawberry cheesecake that is currently baking. None of it is healthy by any means but thats what the youth wanted lol.

    Tonight I'm using what I found on hand again, so we're doing a Brown Rice, Broccoli and Chicken Casserole. I like that it uses Greek yogurt and is a bit more healthy. I found this recipe if anyone is interested.
