    I'm the one to blame for the gourmet buffet.

    BJMHOLMES3- that salad sounds wonderful.

    Everyone your dinners sound amazing. I think we are going out to dinner. DH left here at 6 this morning going to work and still is not home. When he finally gets home, it will be his choice where we go.

    bjholmes-the salad sounds great! but no walnuts???????????????????????????????? nuts are a must for me when making a salad!
    Is anyone else other than myself ready for spring??????????
    Tonight we are having chicken pot pie using shredded chicken I cooked a while back and froze, veggies from the garden, and chicken gravy I made and froze a long time ago. I took out dough for the crust that I made months ago during a batch cooking session. The house smells amazing right now as the chicken is simmering all day in the veggies.
    I have about a cup of pumpkin leftover from our spiced pumpkin lattes we made last night so I'm going to use it to make some homemade oatmeal raisin pumpkin cookies with walnuts. Those are Mr. Nichols and my children's favourite cookies so as you can imagine they are excited! Happy Friday everyone!!!

    We're doing "gourmet buffet" as well... and no complaints when it comes to anything stuffed in corn tortillas fried in oil :-) We have a ton of different meats, veggies and cheese to pick from.

    barbequed ribs, corn on the cob , snow peas or okra (whatever falls out first ), homemade rolls and chocolate pie
    ( making freezer room for holiday supplies and "cook-a-heads" )

    The hubby is going on a road trip w/his dad so I will have a spinach salad with sautéed shi take mushrooms, Feta cheese crumbles, shaved red onion, mandarin oranges or apples lightly dressed with a strawberry vinegarette.

    Marinated pork loin, cornbread dressing, string bean casserole and sweet potato casserole(all on sale at fl last week)
