    To All who asked
    We have not rent out either the Topsail beach house or the large house at the Outer Banks this year. There were not enough dates un-claimed by family to bother going that route and this year plus we needed to do some maintenance ( paint , new landscaping , walking paths , fencing and renovated a bathroom ).
    We have not decided about next year yet -
    Supper was baked sweet potatoes , grilled shrimp and veggie mix ( zucchini, squash, mushrooms, onions,peppers ) & a few pieces of pineapple)
    cheesecake will be later - it is "resting" at the moment -
    toppings of fruit mix peaches,raspberries,blueberries or chocolate drizzle ( melted chocolate squares - dark or mix of sweet and unsweet )

    Ummm....I think I heard cheesecake..... That makes me happy. :-)

    Tonight we are having bagels and cream cheese, truly the last of the giant watermelon and pasta salad. It's a busy night with kid activities so we needed something easy.

    Raesmom - happy birthday to your hubby! I hope he has a great time driving on the track. I would love to do that one day! And enjoy the beach - sounds fabulous!!

    Thanks to everyone for sharing their yummy meals this evening....even for your poor arthritic doggie, jdouglas.

    Lostlp-I cook salmon quite often and its so delicious. I like to season it with fresh rosemary garlic and lemon pepper. Pan fry in a little EVO. Or wrap in foil and add sliced lemon with some capers and some salt pepper. Or even make a rub with chile chipotle and smoked paprika and bake it. Any way you cook it can be delicious.
    Raesmom- I bet Rae is excited abput that cheesecake too lol. Happy 29th bday to D!!!
    Granof20- sounds like you are having a blast! Time with family is so important and I know you are cherishing the time with them!! Like Raesmom asked, do you rent the houses out? If so, id love some info on it:-)

    LOL granof2 I have been calling him the "birthday boy" all week. Those beach houses sound so fun! I will have one some day (fingers crossed). Do you rent them out?

    ThomasG~I bought him the lamborghini (sp?) 3 lap drive course thing in Greensboro this weekend from living social, as well as a massage from groupon, so he will be doing the drive thing on Saturday afternoon and then bright and early sunday morning we will be heading out to Myrtle Beach (which is more of a treat for Rae and I lol) It is going to be very eventful doing all of that driving with a 2 yr old :) Then he can schedule his massage for whenever he likes :)

    I am sure he is going to love his cheesecake......he better since it will be made with lots of love from the both of us

    So I get to cook for my little guy tonight who has an upset tummy due to his new arthritis meds. Chicken and rice is on his menu. Maybe he'll share! ;) Still no menu in sight for us yet.

    Just think of the work keeping more than one home clean and stocked !lol

    Just kidding I love my beach houses - the smaller one at Topsail is perfect for a small family weekend get-away this one is great for longer stays and more people . I love the fact we can take off at a moments notice , bring the pets and stay as long as we like .

    Fish/seafood are super easy on the grill - done before you know it and the taste is out of this world .
    Happy EARLY Birthday to the BIRTHDAY BOY !! ( all males are little boys when it is birthday or Christmas !LOL) . Have a wonderful weekend !
    Cheesecake sounds delicious I may go whip up one for our weekend .

    sorry im of no help LOSLTP, hubby is the one who cooks the fish at home.....everyones dinners do sound good mmmmmm. Granof2~I'm just a bit jealous that you got to spend the summer at the beach house :) Rae and I will be taking hubby on a trip to Myrtle Beach this weekend for his birthday celebration.

    No idea whats for dinner tonight, do know that Rae and I will be making a cheesecake with strawberry topping for the big bday celebration kickoff tomorrow morning! It is hubby's favorite so its the least I can do (and a lot better than a store bought one ;) )

    Enjoying our the last weekend of our yearly stay at our beach house - we have had a wonderful time this year fishing , lounging , cooking when we wanted to. mainly just spending time together .
    The whole family was able to be here several times ( that is a feat these days !lol) -

    LOSLTP - I put my salmon (fish) in foil for grilling - use spices/flavorings of your choice - I rarely use anything because we want the taste of the fish .
    Some instructions/recipes call for a cedar plank - that might give you the smoky flavor (?)
    I love smoked salmon - I order it from the northwest once or twice a year - I had never thought to do it myself ! Good Luck !

    All of your meals sound great. I like salmon many ways including with a brush of soy sauce on the meaty side of the filet. It gives it a nice asian flavor and you can add oil and a pinch of sugar and ginger however be careful because if over an open flame sugar can easily burn so like a barbq sauce watch it once you glaze the fish. May not be an issue being you are smoking it. An alternative is dill, lemon, and onion. No cooking for me tonight, my husband and I are going to the fund raising ball for the UNC SECU House.
