    Gator Girll- Aren't they amazing?! Mine has been on pretty much non-stop for the last week, due to class. But even when it's done, I will be using it often! Right now I have (on 3 different trays) some cheddar "cheese," some kiwi chunks and a buckwheat granola with dried cranberries, apples and golden raisons dehydrating. I also am loving chia seed crisps and kale chips! :-)

    Observant, thanks so much for your kind words. :) I got the cod at HT. Although it was previously frozen, it looked good, and it was on sale for $6.99/lb. I try to select filets that still look a bit frozen. I think the regular price is $8.99/lb. We've had it before and enjoyed it then, too. I used frozen spinach for the creamed spinach and made my own cream sauce, and already had the sweet potatoes, so it was a nice dinner for a reasonable amount of money.

    Plan B for my dinner tonight is going to be M&C (good for a few nights) and I'm roasting a sheet pan of yellow squash and broccoli with olive oil, tamari, garlic, and sesame seeds which I hope will toast. I'll drizzle it with sesame oil when it comes out of the oven. Tomorrow I will add the roasted veg to salad, make an Asian salad dressing, and add some grilled London broil (HT sale) that I have marinating in tamari.

    Frozen pizza is not shameful !!
    I doctor mine up with tomatoes ( home canned or fresh) , mushrooms , baby spinach if I have any and occasionally a little chopped ham or bacon ( very little goes a long way on pizza- it also tames the male beast that wants meat ).
    Enjoy your renovation project !

    I am SO GLAD your DW could eat such a fine meal
    May I ask where did you get the cod ??
    I have been disappointed with the cod I have purchased recently looking for a new vendor if possible.

    RFB - I have a dehydrator from about 30 years ago that I adore!

    Tonight I'm making baked ziti using pasta sauce that I made a couple of months ago that was in the freezer. We'll have a salad and garlic bread to top it off. Then it's ice cream for dessert!

    Nakabi - a kitchen under construction means no cooking and no shame in my book. That's what delis and sandwiches are for. :)

    RFB, it sounds like you have really enjoyed your raw food course. Looking forward to hearing about your Southern brunch.

    Faye, maybe you should see if you can get an invite from Meredith88 - her pizza has everything you like on it! ;)

    Last night we had a real dinner. Baked filet of cod with a garlicky bread crumb topping, mashed sweet potatoes with a few spoonfuls of frozen OJ concentrate, and creamed spinach. The potatoes and spinach were soft enough to enable DW to eat the fish in tiny bits. It was so good.

    Tonight is leftovers for DW of mashed potatoes and the hamburger gravy, and creamed spinach. I have six romaine hearts to be used up, so I'm thinking maybe Caesar salad for me.

    nakabi -there is no shame in frozen pizza in a pinch (espcially when it is purchased on sale with a coupon! lol). Sometimes it is all I can do, as well. Good luck with the wallpaper removal and painting project!

    Ripping down wallpaper and painting the kitchen tonight while 3 of the 4 kids spend the night at Jajas (grandma) so it will be frozen pizza and bagged salad for us. *Hanging head in shame*

    Observant- I find myself drawn more to raw and healthy foods now. The other weekend when I got a pizza, I felt horrible the next day! :-( For me it was more a culinary art to learn, but it has truly transitioned into my everyday life because it's so delicious, and so healthy! :-)
