    ascherer- that is a great idea on the green chilies- that would add some great flavor. Almost could be a fun mini quiche in a "bird's nest" type of thing!!! Thanks for thinking of me... :-)

    RFB - I found 5 ingredients that you could use. No clue what you can make with them. (1- shredded potatoes or small diced 2- bacon 3-cheese 4-green chilies 5-eggs) If you cook the bacon first, you should be able to use the grease that results to cook the potatoes and/or eggs. The cheese gives you the salt and the chilies give you more of the depth of pepper. Good luck with what ever you come up with.

    jdouglas- we used to make hash brown quiche years and years ago, and it is delicious! I think if you do a search for a Paula Deen recipe, she has one out there (I'd have to look in my files for mine). And yes, that would be a great contest entry... but this one will only allow 5 ingredients, INCLUDING salt, pepper, oil, etc. -eek!!!

    RFB do you know how to make a potato crust for a quiche? That could be an interesting contest entry, not to mention a big help for me. LOL. I can imagine it, I just can't seem to make it.

    PS the cookies are going over very well! :) One of my Mom's hospice aides even asked me to save her a couple to try.

    Faye- I'm with you... where do all the dishes come from? :-) And yes, on the butter lettuce. Honestly, I'm thankful for their challenge. I've had salads every day since I posted it, and I feel much healthier... and have saved a bunch of money (bought the spinach also today at LF today using their coupon for super cheap!)

    RaleighFoodBlogger - I find that even with leftovers, there are somehow still dirty dishes! Let us know how the potato recipes turn out.

    jdouglas13 - your cookies are simply amazing. I am positive they will be a giant hit again tonight!

    We are having beef roast, roasted red potatoes (the free Simply Potatoes from HT) and side green salad (using the yummy butter lettuce we like so much RFB).

    Leftovers today... lots of chicken in wine sauce and baked ziti left. But, I'll still be cooking. As a fun side-note, there is a big recipe contest going on now w/Simply Potatoes (LOVE that I got a few varieties to try for FREE- thanks Faye for the coupon heads up!!!)... so I'm working on some fun recipes today, and there will still be dishes- ugh :-( lol!

    jdouglas- those cookies sound delicious! I love butterscotch.

    Tonight will be a bit of a mix and match of leftover chicken, baked M&C for Dad, broiled M&C for me. Dessert will be the very decadent sweet and salty butter pecan butterscotch cookies that I made over Christmas. They were a huge hit, and I'm hoping they will be again today for all my cookie monsters! :)
