    Nakabi- wow, your recipe sounds fantastic! I'm working on a similar recipe w/pancetta and asparagus for my blog next week... yum! Love your sauce idea too!

    Faye- that chicken sounds so good. I love my crock pot!

    Privileges- fantastic recipe. You probably don't know this yet, but one of favorite things in life is balsamic vinegar. Can't wait to try this!! :-)

    nakabi - chicken with goat cheese, spinach and sundried that combo!

    I tried a new slow cooker "recipe" last night for the chicken we are having for dinner tonight. I put 2.5 pounds of boneless skinless chicken breast tenders in the slow cooker (from the Ht Buy2 Get 3 Free deal a few weeks ago). Then I seasoned with pepper, garlic powder and old el paso taco sauce. Then I added 1/2 a container of wholly Guacamole roasted red pepper salsa and cooked on low for 4 hours. DELICIOUS! Can't wait to enjoy it in the tacos tonight!

    Boneless skinless chicken breast stuffed with spinach, sundried tomatoes, and goat cheese wrapped in bacon and drizzled with a honey/djion mustard glaze, quinoa salad, roasted broccoli, and lemon bars for dessert.

    Crockpot Balsamic Chicken!
    Super easy and will be doing it's thing while I do mine - the BEST kind of cooking.
    1 tsp garlic powder, 1 tsp dried basil, 1/2 tsp salt, 1/2 tsp pepper, 2 tsp dried minced onion - mix those together and rub onto boneless skinless chicken strips (cut breast meat). About 4-5 breasts will do.
    then pour 1 TBS of olive oil and 4 crushed garlic cloves (I used refrigerated crushed garlic) into the bottom of the crock pot. Place chicken on top, then pour 1/2 cup balsamic vinegar on top. Cook on high 4 hours ~or~ on low for 6 hours. Serve over rice or egg noodles or not over anything :)

    due to a busier evening than expected, we ended up having Palermos pizza last night (from the e-vic deal at HT his week) and fruit. Tonight it is chicken taco night. I cooked the chicken in the slow cooker last night so it is all ready to go now. will serve it with spinach, avocado, tomatoes, cheese, salsa and sour cream and choice of soft taco shells or regular crunchy shells. Sides of rice and asparagus.
