Meredith, I'll be glad to post the recipe. Pizza dough is very much like bread dough, so if you can make bread, you can make pizza. I like to keep the dough in the fridge for a couple of days to add to the flavor (slow, cool rise).

ncveteranswife, enjoy your dinner with your DH! Sounds really nice. :)

No cooking for me tonight as well. My husband is taking me to the VFW to have steak & shrimp. We like supporting our local VFW and the food is great!

I think I'll make a white bean and chicken chili and some of Brian Shrader's pimento cheese corn bread to go with it.

jdouglas, sadly I do not have either. I would eventually love to have a stand mixer and a bread machine. I occassionally make home made bread and just mix it by hand but I have never attempted home made pizza dough. I'd appreciate the recipe when you get back.

RFB, your burritos sound really good, as does everyone's menu plans. We really need to start adding some of these ideas to the recipe database.

Meredith88, do you have a bread machine or stand mixer? I am terrible at remembering to take things out of the freezer, but pizza dough is pretty easy to make if you have one of those. I'd be glad to post my pizza dough recipe if anyone wants it when I get back -- just let me know.

I'm enjoying my clean kitchen today way too much to do anything elaborate ;-) So, decided on Spanish Rice Burritos- leftover rotisserie chicken from HT sale, flour tortillas (almost free from a coupon printed from HT), and free Zatarain's Spanish Rice mix from past sales. Cook the rice, add in shredded chicken and roll up in tortillas. Then top w/cheddar cheese (from HT past sale) and bake at 350 for about 15 minutes to melt cheese (longer, if you want them crispy). Top w/sour cream (Lilly's sale from HT), chopped green onions and cilantro.

I was planning to make home made pizzas on the grill but I just realized that I forgot to get a dough ball out of the freezer this morning so that will have to wait til tomorrow. Tonight will probably be vegetable soup or chili that can be thrown together pretty quickly.
