    too cold for the fair, having spinach stuffed, bacon wrapped chicken breast with chicken flavored rice and maybe some other veggies on the side for Rae

    We're having guests for dinner. I decided on a Mexican fiesta. Taco bar, queso and chips with all the toppings.

    jdouglas- that sounds delicious! I wish my DH liked shrimp more. And we ended up doing a pasta thing last night too, as my chicken (fresh market on sale) wasn't fully defrosted... grrr! Grateful for the good deals this week.

    So, tonight, another new recipe creation which I'm calling Chicken Sophie. Not the most cost effective, but I've been SO good lately, I was able to save for a bit of a splurge, and still broke even on budget. Chicken breasts stuffed with goat cheese, basil (growing on my windowsill... there is hope!), green onion (always a good price for the punch of flavor) and balsamic glaze. Topped with asparagus spears (great sale from Kroger!), then wrapped w/prosciutto and topped with lemon slices and roasted.

    Since time got away from me, the menu for last night is what we are actually having tonight. Soy sauce marinated London broil on the grill, salad, and mashed potatoes.

    Last night at 7:30 I was still scrambling for an idea. All things considered, it worked out pretty well. It was a sauteed shrimp scampi of sorts mixed into ziti and broccoli. Pretty tasty, and DW even ate some of the semi-hidden broccoli LOL :)
