Vegetable soup

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

This week, we are having:

Vegetable soup and grilled cheese sandwiches (you can see my Veggie soup recipe at the Search WRAL Recipes link above. Type in Vegetable Soup in the recipe database)

Loaded baked potatoes and salad

Chicken and cheese quesadillas (with lettuce, tomatoes, salsa and sour cream toppings), rice and apple slices

Sirloin steaks, mashed potatoes, steamed broccoli

Shrimp and fettucini alfredo, sauteed veggies, garlic bread

    I love everyone's menus this week! Thank you all for sharing them! So many great ideas I want to add to my menus.

    walkerwest - that Frittata sounds fabulous.

    Ascherer - here's my soup recipe in the WRAL Recipe Database: basically do the same thing that Jdouglas does, but I don't saute any veggies first. I just toss them all in and cook. It's the lazy version. And I usually add 16 oz of mushrooms these days cause we all know I have a thing for mushrooms. lol I didn't have chicken stock or chicken bouillon last week so I used beef bouillon. It still tasted great!

    Awww thanks jdouglas :) and that soup sounds super yummy and super easy!! I'm going to give it a shot some time this week. How long do you let I cook after you add the veggies? Also is it ok to freeze? I may throw some chicken in there since DH is a meat guy, but on the off chance that even after the meat he doesn't eat it (he isn't a big soup fan, but doesn't complain about what I cook because "at least he is eating everyday") I just want to know if I can freeze it and save it for the winter. Naneelion, wish I was near by to grab a bowl or two of your soup :)

    Just an update. DH is on his 7 day break this week, so I came home to a fully painted bathroom and kitchen the only room left is our bedroom which I am sure he will tackle over the next six days no need to worry anymore, I stopped painting :)

    RFB, thanks so much for your good wishes and hugs. We didn't get the results because they weren't back yet. We basically spent $50 and a quarter tank of gas on a visit for nothing because they should have called us to reschedule and didn't. Not happy about that.

    Anyway, no menu yet, but Raesmom, you know you're always welcome. :)

    Ascherer - veg soup. Mine is not vegetarian. Saute some diced onion and garlic. Pour in a carton or 2 of chicken stock. Add in a big can of diced tomatoes (or not). Cook that until the onion is soft. Add in your veg - whatever you like. I use carrots, celery, mushrooms, zucchini (but not for DW), kale. I add seasonings at the end: S&P to taste, lots of parmesan, and a little dry thyme. I also cook the pasta separately and store the leftovers separate from the soup. Sprinkle with fresh chopped Italian parsley and more parm. To serve, just put the pasta in a bowl, add soup, stir. Sprinkle with fresh chopped Italian parsley and more parm. Enjoy :)

    Making homemade soup but will not be ready for supper, so we are having breakfast food, sausage, eggs and toast. Soup will be good tomorrow. Wednesday, beef roast, creamed potatoes and broccoli and Thursday probably leftovers before I freeze and/or share the soup. Friday, Saturday and Sunday, not sure , maybe a steak on the grill etc

    Tonight: fried chicken, mash potatoes, green beans, corn muffins

    Tomorrow: shake n bake pork chops, butter and herb rice, biscuits

    Wednesday: loaded baked potato night

    Thursday: leftovers

    Friday: frozen pizza or sandwiches & chips

    Possibly beefaroni tonight. I have a ton of jar sauces thanks to HT sales that I need to use. Add some meat and mix with macaroni and I'm done! I'm headed to HT after work so we'll see about the rest of the week. Probably chicken something tomorrow, church dinner Wed., leftovers Thursday and we have plans for Friday and Saturday so those are taken care of.

    I'm waiting in the doctor's office with DW but will post later with a menu (maybe lol) and a recipe for veggie soup for Ascherer. Wish us luck ... we got to hear what's wrong with her today and if we can fix it.

    Granoftwenty - no problem. I kept saying eggs but you kept thinking sweet muffins. Most people would assume sweet muffins for breakfast. I'm just not a big sweet person. I was very large (size 22/24) in my late twenties/early thirties and swore I would never be that big again. It took me years (10+) but I got down to a size 12 and then age caught up with me. It looks like size 14 is going to be the best I can get. Since I am 5' 10" tall and wear a size 11 shoe, I am happy with this. I still love to cook for others and can make some unbelievable desserts - I just rarely have more than the tasting you do cooking in the kitchen.
