Sauteed teriyaki veggies

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

On the menu at my house this week, you will find:

Meatless Monday: We had Teriyaki tofu with zucchini, red peppers and mushrooms with veggie egg rolls and a side of watermelon.

Tuesday: Beef stew in the slow cooker with carrots, potatoes, mushrooms and onions served on egg noodles. Side of crescent rolls. London broil on sale at Kroger for $2.99 through Tuesday, 6/2.

Wednesday: Salmon burgers (planned for last week but didn't have them so they are back on the menu this week), brown rice, sugar snap peas

Thursday: Breakfast for dinner - southwestern egg and turkey bacon tortilla roll-ups with onions, green peppers, cheese and salsa. Fruit on the side.

Friday: Pizza night - veggie pizza and side salad

    I found a huge pot roast in the freezer last night, so tonight it's pot roast that's been in the slow cooker all day with a gravy made out of Progresso cream of mushroom soup, Lipton dry onion soup, a can of beef broth and a couple of glugs of Chianti. I wish I had some mushrooms to add to the gravy, but I am trying to stay out of the grocery store as much as I can. Sides will be noodles, and some green beans donated by our Princess of Naughty. :)

    open-face heated roast beef sandwich with cheese ; baked sweet potato "fries" ; last of the homegrown lettuce and cucumbers from a friend ; dessert: something with blueberries, pineapple-maybe bananas too-

    cdavismk1 - when my DH takes leftover spaghetti to work , I add a small amount of sauce/tomatoes/spices mixture in bottom of container before adding the leftovers, the remaining sauce/tomatoes/spice mixture and topping all with cheese then he heats it up at work without it drying out too much ( toaster oven or microwave whichever he wants) . Sometimes I cut up the noodles to make it easier to eat . Does not work well with meatballs unless you break them up

    All of your meals sound delicious! And we're going simple again tonight, just some lemony chicken and roasted veggies (maybe some rice for DH) Loving the clean kitchen lately! And for dessert- my now beloved Siggi's Vanilla Yogurt- I think they're 4 for $5 until today at HT.

    Thanks, Faye. I looked on-line and most of the recipes started with plain spaghetti without the sauce. Since this was leftover it was already sauced. But I took some tips from what I read and it turned out really well. My DH had three helpings!

    Grilled extra chicken breasts last night for the pesto chicken, so tonite will be grilled chicken sandwiches and tater tots. Guess I need to figure out a veggie or fruit!

    Gator Girll - I saw your post about a recipe for baked spaghetti yesterday. I have never made it but I am sure allrecipes.com has a bunch of good recipes. I recommend you start there.
