Mushroom and Swiss Crustless Quiche

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

This week we are doing a fridge, freezer and pantry challenge. I'll still be buying some fresh produce and dairy but most of our meals will have the main dish (and most sides) coming from food I have already purchased (on sale.....of course!).

Meatless Monday: Spinach and mushroom crustless quiche, veggie sausage patties, crescent rolls, peach slices You can find the link for a variation on the quiche I made above. I am not using bacon, soy sauce or dill and I am adding mushrooms, spinach and Swiss. You can really adjust the basic recipe by adding whatever veggies and meat you want. It's very versatile.

Tuesday: Baked chicken breasts, stuffing, green beans

Wednesday: Baked cheese ravioli, salad, garlic bread

Thursday: Teriyaki shrimp and veggies, egg rolls, rice

Friday: Veggie burgers, steak fries, fresh corn, peas

    Raesmom, you are my comrade in arms -- we are both recipe rebels LOL ;) I don't think I've had macaroni salad all summer, which has totally slipped past me somehow. Summer, that is. Mac salad sounds yummy!

    Thanks jdouglas I hate to follow recipes to a "T" I guess thats just the rebel in me lol

    I'm in on the pantry challenge as well. This is my last week working from home so I tried to stock up for the next couple weeks so I can just come home and cool and not worry about dropping at the store on my way home since I'll be picking up both girls from their perspective locations.

    Tonight is Ribs and hot dogs on the grill with corn on the cob, baked beans, and cold macaroni salad.

    Tues will be spaghetti with homemade sauce and homemade mozzarella stuffed meatballs with garlic bread from the freezer.

    Wed will be gourmet buffet and options will include the spaghetti, ribs and chili made yesterday.

    Thurs will be chicken in the oven with rice and beans.

    Friday will be some frozen pizza that I got from the market on Saturday.

    Raesmom, I just saw your corn muffin recipe you posted yesterday. I love corn muffins, especially split and toasted on a griddle, and that looks so good!

    Every now and then my keyboard decides it doesn't like to type on this site, so I've been MIA the last few days. Looks like today it's fixed itself. :p

    Great menus, everyone, and I love the idea of the pantry challenge. Living so far from everything, I've learned to live off the pantry and freezer, so both are usually well stocked. I am fortunate to have a large upright freezer that resides in a spare bedroom along with a large garage cabinet to keep my collection of baking pans and vases. The bonus of living off the pantry is stocking up when things are at the lowest price.

    Tonight's pantry offering from the freeer is baked bone-in chicken breasts with an under-the-skin herb rub of rosemary, shallots, grainy Dijon, and butter. Side will be leftover chopped tomato, grilled squash, and red onion mixed into rice. Still working on the chocolate chip cookies. :)

    RaleighFoodBlogger - I use Isagenix IsaLean whey protein powder and order it through a high school friend of mine who is a rep. If you want her info, send me an e-mail and I'll give you her link. It isn't the cheapest one available but it is high quality. I've been using it daily since May.

    Faye- that is a great idea on the protein shake. Do you have a certain type of whey protein powder that you recommend?

    Lindabates- Sounds delicious! I need to try pork chops in the crock pot.

    Meredith- have a fun cookout! I almost forgot it was a holiday today!

    I almost feel human again as I have our menu planned out for the entire week! Bonus, we cooked all the meals yesterday so everything can just be reheated when I get home from work :-)

    Last night we had homemade lasagna with side salads.

    Today we are having family over for a cookout. We are grilling hotdogs with all the toppings and everyone else is bringing side dishes.

    Tuesday night we are having beef enchiladas with Spanish rice, black beans and corn.

    Wednesday night he is having a foil dinner with sausage, potatoes, squash, zucchini, and carrots. I'm staying in Raleigh to get my hair cut so I'll go out to eat.

    Thursday night we are having chicken pot pie made from scratch with my grandmother's recipe with salads and grapes.

    Friday night we are eating at my in-law's house for dinner (and to use their laundry room ;) ).

    Saturday night we are having pulled pork barbeque with cole slaw, baked beans, and tater tots.

    I've also got all of his lunches cooked for the whole week!

    I'm in on the pantry challenge too, went and bought milk and produce yesterday.... I'm having a protein shake for Breakfast and dinner, string cheese or fruit for snack and a big salad everyday for lunch.

    Family is having: everything listed was already in the house!
    Breakfast choices: eggs with bacon or sausage, poptarts, cereal or oatmeal
    Tonight - hamburgers on the grill and chips
    Tuesday- crockpot pork chops and gravy with mash potatoes and green beans
    Wednesday: breakfast for dinner
    Thursday: sandwiches and fruit
    Friday: Frozen pizza
