Here's our menu for the week:

Italian chicken breasts on salad with rolls

Stuffed yellow peppers (thanks for the peppers, Jdouglas!)

Soup & sandwich night

Spinach, mushroom, turkey bacon and cheese omelets with English muffins and fruit on the side

Veggie pizza night (using a $1 Harris Teeter pizza dough ball on sale through 9/20)

    Meredith, that marinade sounds wonderful!

    Tonight is going to be spaghetti and sausage with some garlic naan bread BOGO at HT. I've never had it before and it looked good! The leftover sauce is destined for eggplant parm later this week for me, and sausage and peppers for DW.

    Hoping there will be some whole roasted chickens left by the time I get to Earth Fare. Plan on serving it with biscuits and corn on the cob. Will use the leftovers in a pot pie tomorrow. Cheese enchiladas and green salad on Wednesday, homemade pizza on Thursday and Ahi Tuna on Friday. If anyone has a good recipe for the tuna, would love to hear about it. I've never cooked it before. Willing to grill or bake.

    Tonight we are having pork chops that are on sale at Food Lion this week. They've been marinating since we bought them on Saturday in a home made sauce. I used pineapple juice, lemon juice, ginger, soy sauce, red pepper flakes, garlic, and onions. I'm hoping they turn out well! The hubby was nice enough to offer to still grill them even if he gets soaked in the rain :-) Sides will be basmati rice or mashed potatoes and roasted brussel sprouts with fresh fruit,

    RFB -- glad the roasting worked out so well for you! I stumbled across the trick of roasting canned tomatoes once when I roasted some Italian sausage destined for spaghetti sauce. There was such a nice layer of fond in the pan, I couldn't bear not to deglaze it. Thus, roasted sauce.

    Faye, thanks for reminding me about the peppers. I totally forgot about them (big surprise). They will turn into stuffed peppers with rice, spinach, crispy prosciutto, and parm, or sausage and peppers one night here.

    Homemade vegetable soup with all fresh veggies (zucchini, mushrooms, tomatoes, green beans, potatoes) and some sort of sandwich on the side.

    Thinking one day we will have meat loaf, another day tacos. Rest tbd.

    Tonight and tomorrow we're having Spaghetti w/Meat Sauce (thanks JDouglas for the roasting of the veggies and canned tomatoes idea- tastes great and no salt added!) And then the rest of the weeks we're visiting family up in the mountains :)

    We are doing a homemade turkey pepperoni pizza- the dough was $1 from a prior HT sale and the pepperoni was also a $1 from a Kroger prior sale too. The cheese was stashed from the freezer which I'm sure I didn't pay full price for!

    Tuesday: hotdogs and chips

    Wednesday: chicken Fried rice

    Thursday: Breakfast for dinner
    Friday: Frozen pizza
