Chicken quesadillas

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like. If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Our meals this week include:

Monday: Chicken quesadillas, rice and salad

Tuesday: Teriyaki chicken in the slow cooker, rolls, corn, grilled zucchini and strawberries

Wednesday: Cheese tortellini, garlic bread, broccoli

Thursday: Basil pesto chicken bake (4 chicken breasts in pan, top with pesto, then Roma tomatoes, then mozzarella cheese. Bake at 400 degrees for 40 minutes (or until chicken is done). You can see a video of the recipe for 4-Ingredient Chicken Bake on youtube.com. My great thanks to JDouglas for the homemade pesto! Sides include salad and rolls.

Friday: Leftovers or homemade pizza (depends on how much leftover chicken we have)

    lindabates - it sounds like you and I are on similar healthy eating plans. It's a very good thing that I like veggies!

    Philly cheese steak hamburger helper and green beans ( everybody else) baked sweet potato and steamed broccoli(me)

    Tomorrow: leftovers- steak, homemade chicken pot pie, Mac n cheese, green beans, philly cheese steak( veggies for me)

    Thursday: pork chops, mash potatoes, baked beans, corn bread

    Friday: NO clue yet!

    Observant-I am doing well! Staying home with my babies and LOVING it! Best job ever!!! Mr. Nichols is great; he's such an incredible hubby and daddy; we are blessed! The Littles are doing well!!! D just turned 6, F is 4.5, J will be 3 next month, and ESPN N is 17 months!!! Our garden did incredible this year!!! It was bigger and better than ever lol:-)
    Raesmom- no baked ziti??? Lol

    Faye, my pleasure on the pesto. Hope you like it. :) Don't have too much chicken this week....

    Everyone's menus sound so good! As usual, no menu here, and tonight's dinner is a bit of a guess. I'm hoping for burgers on the grill and if I really get an energy burst, homemade potato salad. DW and I have been out running since early (for me) this morning and just got home.

    meredith88 - I love the grilled cheese/tomato soup combo, as well. Glad you made it back safe and sound.

    Gator Girll - we are all glad the sun reappeared and that you did not have to resort to such drastic measures! I would have brought you a sun lamp to hold you over. :-)

    Pepper2 - I adore your menu tonight. I could live on veggie soup and grilled cheese. The pumpkin bread is icing on the cake.
