Pasta & chicken primavera

What's on your menu tonight?

On the menu this week we have:

BBQ chicken (chicken cooked in the slow cooker) and provolone slices on rye bread, slaw, steamed carrots

Breakfast for dinner: Southwestern tortilla roll-ups with scrambled eggs, cheese, turkey bacon, sauteed peppers and salsa. Side of corn.

Chicken tacos, rice, salad

Maybe Moe's on Thursday, 9/21 for free queso day!

Baked salmon, sweet potatoes, salad

Pasta and Chicken Primavera Recipe

In the photo above, you can see the pasta primavera I posted about last week. Below is the recipe link once again in case you missed it.

I loosely followed a recipe from Kraftrecipes.com HERE. I cooked the chicken in the slow cooker and then used the broth from the slow cooker combined with the cream cheese and parmesan to make the creamy sauce. I also used different veggies (mushrooms, zucchini, spinach, green pepper, tomatoes) and combined whole wheat pasta with regular pasta.

    JDOUGLAS13 - I love the Alexa onion rings. They are my go to favorite. They bake up nice and crispy because they use panko breadcrumbs as a coating.

    DH is out of town on a business trip so the girls and I are going to Mexican with a BOGO free entree coupon that I have. We always have a special "girls only" dinner when he's gone :)

    GatorGirll, how are the Alexa onion rings? I've been meaning to try them.

    I have a lot of veg to use or lose, so this week I'll be incorporating them into a couple of sheet pan dinners. One will be sweet potato chunks, fresh Brussels sprouts, and chicken drumsticks. The other will be cauliflower topped with bread crumbs, garlic, parm and drizzled with EVOO with Italian sausage.

    I also have 4 packages of assorted mushrooms that I need to do something with. Suggestions are welcome. I know I bought them for something in particular, just can't remember what exactly that was...

    At the moment, I'm still chugging my coffee.

    In honor of cheeseburger day we are having White Kastle cheeseburgers (spruced up with pickles) and Alexa onion rings. I'm adding celery and carrot sticks as the healthy component. 😀

    My beef vegetable soup came out great last night. Looking forward to nice hot comforting soup all week :)
