Caprese Salad

What's on your menu tonight?

This week we are having:

Chicken and pasta primavera and caprese salad (left over from Sunday night's dinner)

I loosely followed a recipe from HERE. I cooked the chicken in the slow cooker and then used the broth from the slow cooker combined with the cream cheese and parmesan to make the creamy sauce. I also used different veggies (mushrooms, zucchini, spinach, green pepper, tomatoes) and combined whole wheat pasta with regular pasta.

Salmon burgers, rice, steamed carrots

Veggie pizza, corn, fruit salad

Garlic shrimp on a salad

Out to dinner one night to celebrate my daughter's 18th birthday!

    We got lucky. Dinner was soup and sandwiches. Still have power but we have one more rain band to go through tonight.

    ascherer - I have been wondering how you are all doing in Myrtle. Glad to hear you still have power and I hope it stays on!

    My eye isn't too bad - just a puffy irritated stye. After the ointment kicks in eventually, all will be back to normal. And it will look great for the 5 classes I'm teaching this week. LOL

    observant - cheesecake makes everything better!

    aerogirl2084 - I love the Morningstar Buffalo Chix patties on wheat bread with lettuce, pickles, tomato slices and mayo. I think that will be lunch tomorrow. Thanks for the idea. :-)

    aturner25 - what are your favorite crock pot dump dinners?

    FAYE - I am SO SORRY to read about your eye !
    I hope the procedure went well and you are getting lots of special treatment from your family .
    I hear cheesecake is a powerful remedy for many ailments !! LOL

    So not sure about the entire week, but I have a least a few nights planned. Home alone for a couple more weeks, so I will be sure to have leftovers for a couple of days -- one night is going to be a shrimp pasta of some sort, and then some steam fresh veggies with Morningstar Buffalo Chix patties a couple of nights--I have several bags of veggies that need to be used. Nothing glamorous by any stretch of the imagination, but I'm perfectly fine with that :). Hope you all survived another "manic Monday!"

    If we keep power, dinner is going to be soup and grilled cheese sandwiches. If we lose power, If we lose power it will be pb&j with fruit cups and chips. Power has flickered twice and we have already lost a large limb from a tree in the backyard. As much fun as the beach, it does have its drawbacks. At least Momma is still tired from her trip and has napped off and on today.

    Faye - I hope your eye is doing better quickly.

    Tonight - fried chicken , mashed potatoes with gravy ,mixed veggies ( all the little containers in the fridge thrown into one pot ) _

    Thinking of everyone who is or has family/friends in the path of IRMA .

    JDouglas13 - I have never had trouble with my kittens/cats and the slow cooker . I have had MANY kittens/cats at a time ( as many as 14 rescued kittens and 3 mamas in addition to mine )
    I sat my slow cooker on a hot pad on the stove top pushed as far back as possible - so I still hvae plenty of prep space.
    As Faye suggested - a test run to see how Lily does ??
    How old is she ??
    Is she very active ??
    One of my rescues would climb into my Kitchen Aide mixer bowl every chance she got ! LOL

    Faye, yikes... your eye? That doesn't sound good :( Hope it's just a fast healing sty.

    Thanks YBAverage -- I'll give it a try with the slow cooker. My little meowie girl definitely keeps me on my toes. And what a mooch!! She has no hesitation to get her face right into anything she wants regardless of whose plate or glass it's in.

    Would you believe I have to fight her for my coffee in the morning? Silly Lilly. :)

    Happy Early Birthday wishes to your daughter!
    Mon- Hamb. steaks, baked sweet potatoes, sald and green beans.
    Tues- Veggy stir-fry w/brown rice (bought a large bag of oriental salad mix on sale for a $1.49 and need to use it up.)
    Wed- Baked bbq chicken and broccoli w/ cheese- maybe some mashed potatoes.
    Thurs- maybe out/ if not, taco night
    Fri- homemade pizzas
    The weekend isn't planned yet but still have some crock pot dump dinners in freezer and whatever hubby wants for football games. Last weekend I will have to work for a while -YEAH!!!!
