Spinach, tomato and cream cheese baked omelet

What's on your menu tonight?

This week our menu includes:

Meatless Monday: Spinach, mushroom, onion and cheese quesadillas, corn on the cob (from HT .20 sale) and fresh pineapple (from Lidl sale)

BBQ chicken sliders, sauteed squash and onions, Mandarin orange slices

Baked salmon, saffron rice, steamed broccoli

Breakfast for dinner: Spinach, tomato and cream cheese baked omelets topped with avocado and salsa, whole wheat toast, fruit salad. My kids love this omelet because it uses cream cheese and is so delicious!

    I have next to nothing of a meal plan this week. Tonight was leftover fried chicken, potato salad, broccoli salad, strawberry pretzel salad and banana pudding. Tomorrow will be clean out the rest of the fridge between lunch and dinner. Wednesday should be the first time I cook. Today, I did pick up a few ears of corn and a couple of tomatoes from a farmers market. Hopefully I can get Momma to show me how to make creamed corn. Happy Monday everyone.

    observant - what wonderful memories you have of your dad! And it sounds like he was a great cook and garden, which is impressive! It's really sweet that you continue to celebrate him.

    ybaverage2003 - it's too bad you missed the corn sale at HT through yesterday. Here are the sales I could find:

    Kroger: Sweet corn, .33 each

    Aldi: Sweet corn, 4 pack, $1.29

    Lowes Foods: Sweet corn, .40 each

    Carlie C's: Corn, .33 per ear

    I changed my mind on dinner at 4 pm today. lol I saw a recipe for stuffed Italian zucchini boats and decided to make those instead since I had zucchini that really needed to be used. We'll do the quesadillas later in the week. I'll post the recipe and photos tomorrow. Waiting for it to come out of the oven now.

    Faye - I hope your day with your dad was Wonderful !
    I have had my dad on my mind a lot the past few weeks - his birthday was close to Father's Day so we had 2 parties for him every year !
    I went easy for my supper yesterday ( DH does not like salmon so this shift is the time I can have it ) .
    My dad could cook - there is no burger or steak that tastes as good as the ones he cooked on his grill/cooking station he built in the backyard .
    He worked in a cafe before he and my mother married and for a short time afterwards .
    We had lots of homegrown food at our house - a huge garden , pigs and chickens and he loved to fish. I took him fishing just days before he passed .

    Tonight is fried chicken breasts, mashed potatoes and corn on the cob, if I find a good deal on it.

    observant - the meal you posted about yesterday in memory of your dad sounds delicious and it was so sweet of you to make one of this favorite meals to remember him by. He clearly had good taste.

    barbiedoll1967 - quesadillas are so easy - at least the way I make them. :-)

    First, I sautee the veggies in a little olive oil with garlic powder, pepper and a little taco seasoning. This week I am using spinach, mushrooms and onions. Then I set them aside and wipe out the skillet. I spray a little non stick olive oil spray on the skillet.

    Then I put a flour tortilla on the skillet, top it with cheese (I usually use Mexican 4-cheese shredded) and then spread the veggies on top. Then I put a little more cheese on top and then another tortilla.

    Once done, I cut it into wedges. If I used the smaller taco size tortillas, it's big enough for 1 person. If I use the large size burritos then it usually enough food for 2 people.

    Then I offer a variety of toppings like salsa, avocado, sour cream, lettuce, tomato.

    Tonight: bbq ribs on the grill, mac and cheese, baked beans, and Italian bread.
    Tuesday: Crockpot chicken and stuffing with gravy with mashed potatoes.
    Wednesday: steak, salad and biscuits.
    Thursday: leftovers or sandwiches and chips
    Friday: make your own pizzq

    Faye your week's menu sounds great. I love quesadillas but have never prepared one before. Can you tell me how you do yours? Tonight I am having an omelet.
