What's on your menu tonight?

This week our menu includes:

Salmon burgers, roasted sweet potatoes, spinach salad

Vegetable soup (I made a big batch last week), buffalo chicken dip, multi-grain rolls

Stuffed red peppers (using the .88 peppers from the HT 4-day sale last weekend), corn casserole, fruit salad

Veggie quiche, breaded zucchini sticks, pasta salad

Out to dinner with my dad at a local BBQ place

    Everybody's dinners sound great tonight. Thank you for sharing them (and your weekly menu, lindabates)!

    We had our BBQ dinner tonight at The Pit in Raleigh with my dad, who is a Navy vet. We talked about the person who replaced him in the helicopter medical unit he was in during Vietnam when my dad's time was up. Sadly, he died in a helicopter crash about 2 months after replacing my dad. When we went to DC, we found his name on the wall. It was very moving.

    This was my first visit to The Pit. I had the chopped bbq turkey with sides of slaw and sweet potato fries. We split the peanut butter pie & carrot cake between all of us. It was delicious and I have plenty of leftovers for lunch tomorrow. Their biscuits and honey butter are delicious as well! Needless to say, I will be serving some extra time on the elliptical at the gym tomorrow....

    Lemon herb chicken breast, roasted Brussels sprouts & carrots, mashed cauliflower, yeast rolls.

    Organic chicken breast was marked down at Food Lion yesterday, 1.2 pounds for $6.02. Had a $5 coupon (Perdue chicken). Over a pound of organic, brand name chicken for $1.02!!

    THOMASG-What a thoughtful and SO appropriate way to celebrate the holiday!

    We are having pork baby back ribs, corn on the cob, homemade potato salad and chips for our meal. I'll figure out the rest of the week tomorrow.

    We began the day by attending a Memorial Day Service at Maplewood Cemetery in Durham this morning then we served meals and handout gently used & new clothing and toiletries to needy veterans .
    Supper to night : family cookout in the backyard -
    cheeseburgers and hotdogs with all the fixings ( chili, lettuce, coleslaw, pickles, tomatoes, etc),homemade french fries , baked beans & watermelon

    Tonight dinner will be: dry rubbed roasted bbq chicken, Lipton onion soup potato slices, white corn, bacon ranch pasta salad and crescent rolls.
    Tuesday: cubed pork chops with home made gravy, mash potatoes, and green beans with biscuits.
    Wednesday: breakfast for dinner
    Thursday: shrimp scampi for hubby, popcorn chicken and fries for the kids.
    Friday: Sandwich and chips
    Saturday: steak kabobs, mac n cheese

    Gator Girl - Well said and I second it.

    Tonight is leftovers: homemade BBQ with slaw, chicken Marsala or steak from the restaurant Saturday night, hamburgers from last night. Sides include watermelon, cukes, tomatoes, grapes and chips.
