What's on your menu tonight?

At the Prosser Cafe this week, we will be enjoying:

Meatless Monday: Spinach, mushroom and cheese quiche (eggs were .79 at Walgreens in Garner), croissants (BOGO at Lowes Foods), pineapple

Salmon burgers, roasted asparagus, salad

BBQ chicken sliders, slaw, roasted sweet potatoes and carrots

Teriyaki shrimp, stir fry peppers, onions and mushrooms, rice

    ASCHERER- Praying for you and your Mom. I know how tough it can be to be the Designated Daughter. Don't forget to take care of yourself.

    Hamburgers smothered in onions and gravy, rice, Brussels sprouts and sweet rolls

    ascherer - I am so happy to hear she is healing well. I know I have said it before, but she really is lucky that you can spend the time with her to help with her recovery.

    steak subs with chips ( hubby)
    Steak slices, Brussel sprouts, broccoli (me)
    Chicken sandwiches and chips(kids)
    Tuesday: baked pork chops, bacon ranch pasta salad,baked beans, garlic biscuits.
    Wednesday: leftovers- tacos, or pork chops and leftover sides
    Thursday: Breakfast 4 dinner- pancakes, eggs,bacon,hash browns Friday: Make your own pizza and wings

    Easter leftovers will be going into lamb sliders, salad and green beans :)

    Faye - Thank you for the kind words. Momma is doing much better. It just takes time for bones to mend and the older we are, the longer it takes. I will have spent the majority of 9 weeks with her when I come home next week but this should be the last trip for a little while.

    I have leftover bacon from yesterday's breakfast so tonight is one of my favorite sandwiches - BLT!

    No menu plan this week. Part of the week is at home and part at Momma's.

    Tonight is leftover Easter ham and boiled eggs and a veggie TBD. I might make deviled eggs or egg salad with the decorated eggs. Luckily our share was only five of the eggs.
