Pasta Salad

What's on your menu tonight?

On the menu this week we have:

Meatless Monday: Baked spinach, cheese and mushroom omelet (had planned to make it this weekend but didn't get a chance). Side of clementine slices. You can see the recipe link above.

Veggie chicken melts on rye bread, pasta salad and steamed carrots

Shrimp salad on a green salad

Spaghetti, parmesan bread, salad

Pizza night! Veggie pizza with side of veggie of some kind - depends on what is on sale starting Wednesday

    Faye- thank you! I've been loving using the canned Harris Teeter brand diced tomatoes w/rosemary, etc. (can't remember the exact blend). We've enjoyed using them more than pasta sauce :)

    lindabates - Jambalaya is one of my dad's special dishes he makes.... like once every 2 years. I think it's time to hit him up to make it again soon. Thanks for the idea. I'm sure he'll thank you to. lol

    Sorry I've been away so long... it's been a long and windy ride to say the least! Hope you all are doing great!

    Monday- Lasagna leftovers
    Tues. & Wed.- Roast Pork Tenderloin w/roasted baby potatoes and asparagus
    Thurs.- Pork Fried Rice w/leftover tenderloin
    Fri- Shrimp and Tomato Pasta w/Parmesan and Broccoli
    Sat.- using a gift certificate for a very nice restaurant here in honor of our 25th Anniv. last week. Such a nice gift from my brother and his wife :)
    Sun.- Crock Pot Maple Dijon Chicken w/Roasted Sweet Potatoes and Corn

    Making ham and cheese quiche for part of the family and a veggie quiche for me. Might bake some tater tots to go with it.

    Tonight I am making Cheesy jambalaya with smoked sausage and shrimp.

    Tuesday: bbq Chicken, mac n cheese, baked beans

    Wednesday: leftovers or sandwich night
    Thursday: hotdogs and fries
    Friday: not sure... depends on when the step kids are coming over.... but I've got make your own pizza, and make your own tacos, or pork tenderloin as options as well

    Mini turkey quinoa meatloaves, sauteed squash, mashed potatoes. Rest of the week is up in the air with one of my daughters leaving for an academic competition later in the week and husband leaving on a business trip at the same time.

    Faye, I did make that omelet on Sat. It was a little more prep than I anticipated, but well worth the effort - this one's a keeper! I used pepper jack cheese, and also added the mushrooms as you do - very yummy. My sincere thanks to you and RFB for posting this recipe. :-)
