Homemade mac & cheese

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

    I haven't even cut into it yet jdouglas and I think Rae forgot about it bc she hasn't even asked for it. I did eat up allllll of the cucumber and onion yogurt concoction and it was amazing!! And now I have no cucumbers :( Im gonna make a run to the store tomorrow between leaving work and going to the gym to pick some up....its my favorite snack. I will send you that recipe via Pinterest jdouglas but literally its 2 cans of sweetened condensed milk, and 3/4 cup (but I did 1 cup) of lemon juice. Whisk it all together and put it in a graham cra cker pie crust and in the fridge it goes.

    And yes the house was VERY different without a good way LOLOLOLOLOL

    JDouglas13, Thank you! Just sent the email :) lol, as my mom always followed recipes - precisely - however, I share your constitution. I expect to be a happy clam with the approximate measures. Planning a Labor Day 'reveal' and will let you know how I fare.

    Raesmom, I just read about your lemon pie from yesterday. That sounds so good! Would you post a link pretty please? I love anything lemon.

    I also say you mentioned the cucumber salad with yogurt. My Mom used to make a salad you might like and it didn't have to sit overnight. Sliced cucumbers, chopped green onions, sour cream or greek yogurt, season salt on top or a mix of adobo and a little paprika.

    EM2S, I'd be glad to share the recipe for border cake with you! Shoot me an email to cbenedict111 AT gmail DOT com. There's no way I'll ever get the recipe down to 1000 characters! LOL :) I do have to warn you in advance that sometimes my measurements are approximate which makes some cooks/bakers a little crazy. My Mom used to follow recipes exactly. I think I am constitutionally unable to do so. ;)

    Raesmom, what a great menu! I can't imagine the house without Rae in it.

    Meredith, your buffet sounds WAY better than any buffet I've encountered! :)

    I'm really hoping any rain tonight holds off. The plan is for beef kabobs on the grill using the sirloin FL has on sale this week. They've been marinating overnight in soy, fresh garlic, and a bit of oil. I'll be adding mushrooms, peppers, and red onion to the kabobs and serve over rice.

    The cake is gone... so maybe I'll make some nut ball cookies.

    JDouglas13 - I'd be grateful - and truly honored - to receive your family recipe for border cake!! Looks like my pantry has the proper chocolate ... and enough cinnamon and cloves to make it while staying in budget. Thank you for your generosity and kindness to share! Very much looking forward to trying this special treat :)

    Easy-to-prepare, frugal-fare this week includes shredded/marinated meat from last night's rotisserie chickens for bbq chicken sandwiches (on HT $.77 buns) with slaw, baked beans, carrot sticks and brownies .... and chopped bits of chicken in a pot of white bean chicken chili another night. I've a great coupon for a free Costco pizza and will add a large salad, cups of tomato basil soup, sliced apples (FL prior week deal) and tbd dessert. Also, I'll use a Costco coupon for a free jumbo bag of tortilla chips to make platters of veggie layered black bean nachos (& HT shredded cheese from a prior week's deal) most likely Friday's supper. Another night, I'll stuff halved yellow and orange bell peppers (Kroger markdowns) with ground Butterball turkey (Walgreens $.99/lb) mixed with seasoned croutons (HT/coupon freebie) topped with chunky roasted garden veggies, side of spagetti marinara (HT/coupon freebies), and peanut butter cookies (pantry stock).

    Raesmom - congrats to your little one! Can't believe she is in school now. Your slow cooker chicken sounds great!

    We are having the leftover homemade mac & cheese from last night with a side spinach salad. There is just something about homemade mac & cheese that is so very comforting. Glad my youngest requested it yesterday. :-)

    Today was Rae's first day of school, well half day. First full day is Wednesday. It's weird not having her around, but I'll get used to it. Tonight dinner will be leftover pinterest inspired ravioli bake.

    Tomorrow I'm planning on putting the whole chicken in the slow cooker with some mccormick rotisserie seasoning and a bit of chicken stock. I'll shred it and serve with rice and the rest will be used for chicken tacos and salads for the rest of the week.

    Wed chicken tacos

    Thurs take out fake out yakisoba noodles with stir fry veggies and chunks of pork marinated in sweet and sour sour

    Friday maybe gourmet buffet or mini meatloaf cups with mashed potatoes and corn on the cob

    Happy first day of school eveyone!!!

    Tonight the gourmet buffet will be open for dinner :-) Options include beef tenderloin in a red wine mushroom sauce, mahi mahi with pineapple jalapeno salsa, dry rubbed steak, mashed potatoes with gravy, coconut cornbread, coleslaw, side salads, grapes and watermelon. There is only a little of each item left since we had the same buffet multiple times this weekend so there should be exactly enough for dinner tonight and then the fridge will be cleaned out!!!
