BBQ chicken on a salad

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

What's on your menu tonight?

Meatless Monday: Ginger and teriyaki tofu with mushrooms, zucchini and onions. Veggie egg rolls on the side.

BBQ chicken breast, salad, corn on the cob

Smoked Sausage and Veggie Frittata (see recipe link above), crescent rolls, grapes

Chicken tacos, rice, salad

Shrimp salad on crescent rolls with a tomato, avocado and cucumber salad

    meredith88 - YIKES on the new commute time! I hope you can find a better route or adjust your schedule so you can go when traffic is not so bad. Maybe now is a good time to learn a new language with Rosetta Stone while you sit in traffic! Batch cooking on the weekend sounds like an excellent plan.

    Faye, I am starting to see the light at the end of the tunnel! I still won't cook much this week but I'm hoping that by next week we'll be done with enough of the unboxing and rearranging that we can get back into the cooking routine :-) However with the move I've traded my 6 minute drive to work for a 40 minute - 2 hour drive (depending on traffic and accidents) so I think we'll have to start doing most of our cooking on the weekends and eat leftovers throughout the week so we can eat before 10pm!

    So Thursday from last week blog looks to be a thing of the past! This blog was funny that day. We also had a cereal kind of night then because we had a big work lunch that day.

    This weekend I was busy in the kitchen. Friday night was smokey chicken tacos and Sunday was an Israeli couscous bowl with chicken. It was so good. That is my lunch today.

    I think tonight will be an easy night with burgers on the grill, cheap fries from weeks past at HT and some kind of steam fresh veggie. I got a package of slider buns at Kroger this weekend for .89 cents.

    ybaverage2003 - great idea on the ricotta and chicken. Let us know what you think. Are you using a pre-made crust like Pillsbury pie crust? That's probably what I will be doing. :-)

    Yes, Faye, that galette recipe is very close to what I will be doing...going to add some chicken for protein and I like ricotta instead of the cream cheese :) Will let y'all know how it turns out !

    GREAT menus this week everyone! Looks like we are back on track with cooking once again. I know I am. One of the girls started school today and the other starts in 2 weeks so it is time to get back on a more normal schedule. The carefree summer schedule and dinners are just about gone.

    ilivefancy - that sausage and pasta skillet meal sounds like a winner. Will have to do that soon with the other Butterball turkey sausage I have in the freezer.

    meredith88 - clearly you are digging out of the boxes if you are moving on from pizza! LOL

    ybaverage2003 - I had no idea what a squash galette was but looked it up and now I want to make it! What a great use of all that fabulous squash from your in-laws. I found this recipe online. Is yours anything like it?
