Sausage, peppers and onions

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, this may give you some helpful ideas.

What's on your menu tonight?

Meatless Monday: Veggie and cheese quesadillas and watermelon

Cajun shrimp, saffron rice, squash and onions

Homemade veggie pizza (using the HT pizza dough ball on sale for $1 recently), side salad

Turkey sausage with green peppers, mushrooms, and onions served on a bed of rice

Baked chicken, steamed carrots, corn on the cob and a cucumber, avocado and tomato salad

    Lindabates, the Chinese chicken salad is really easy -- most of the effort is assembling the different components, which are usually leftovers from other meals. Sometimes I serve it over romaine. Other possible add-ins: rice drizzled with a little sesame oil, pineapple, cooked broccoli, toasted sesame seeds, sliced green onions, sliced radishes. The sugar snap or snow peas are raw for crunch. The mandarin orange can be fresh or from a can. Sliced water chestnuts from a can. Shredded chicken (grilled is awesome). The dressing is made by taste and includes fresh minced garlic and gingerroot, tamari or soy sauce, rice vinegar, honey, OJ concentrate, sesame oil. Any Asian flavored bottled dressing like a sesame ginger would work. You could even do a balsamic vinaigrette. Yummy, but it wouldn't taste quite so Asian.

    Even my veggie hating DW likes it! :)

    raesmom1612 - I'll be right there for ziti (or maybe I should go to Twinredheads since she may have more leftover....)! And this is really funny. I have 3 ripe bananas on my counter as well. I am also planning to make banana blueberry muffins this evening. :-)

    I agree with Linda, jdouglas13. Your Chinese Chicken Salad sounds great.

    Everyone's menus sound yummy! Not sure about the elk though -- I think I'd have a plan B in mind as well.

    Meredith, easy does it with the unpacking. What a grueling job. I don't think we've ever been able to do a room a day. Wow! FWIW, the Chinese place in the HT/Flowers shopping center is pretty good. Hugely improved from when they first opened. We just had it the other night.

    My DW and I have both been running on empty lately with the heat and doctor visits. Last night we had tuna sandwiches on rye for dinner, and it wasn't even my own rye bread. The veg was the celery in the tuna and sliced tomatoes on top. :p

    I bought a couple of packages of the bone-in chicken breast that's BOGO at HT this week. I plan to poach them in chicken stock. Some of it will become chicken cacciatore with HT rigatoni for $0.57 from my weekend evic. The rest will go into Chinese chicken salad with rice, sugar snap peas, grilled asparagus, water chestnuts, and mandarin orange segments.

    Tonight they will have the option of leftover ziti (last call lol) or bbq chicken drumsticks in the oven with yellow rice and veggies

    and the rest of the week in no particular order....


    pork chops in the crock pot with country gravy mashed potatoes and veggies

    corn chowder (for me) leftovers for the family

    MAYBE dominos or papa johns on Friday

    I have 3 ripe banana's sitting on the counter so depending on how work goes today Rae and I will make some banana nut (protein maybe) muffins to be eaten throughout the week.

    Monday: Baked Ziti, garlic bread, green salad; Tuesday: leftovers (ziti, ham, or fried rice), Wednesday: either BBQ or Crockpot pork loin, biscuits, cauliflower, Thursday: Leftover pork loin, Friday: Grilled salmon, corn on the cob, rice

    ybaverage2003 - interesting! Where did you get the elk meat? Let us know what you think.

    Meredith - congrats on getting another room unpacked! Breakfast for dinner is a totally acceptable option any night of the week to me. :-)

    Trying something way out of my comfort zone: Elk burgers. Not sure of sides yet, or Plan B if I don't like 'em :)

    We unpacked the entire kitchen yesterday afternoon/evening (took 6 hours!) so we now have all our pots and pans to cook with again :-) However we are too tired with still unboxing a room a night to cook up any fancy meals just yet so dinner tonight will be breakfast! We're having bacon, scrambled eggs and either french toast, pancakes, waffles, or biscuits.
