Turkey sausage and peppers

Here's the place to share your meal ideas for the evening or the week, post where you bought the ingredients frugally and even share a recipe if you would like.

This week we are having the following meals:

* Teriyaki chicken with pineapple and bell peppers, egg rolls (thanks for the idea Katy!) - using the Perdue short cuts grilled chicken from HT SD and Kahiki egg rolls from SD

* Penne with a light alfredo sauce, garlic bread and roasted asparagus (asparagus is $1.49/lb at Harris Teeter through Tuesday!)

* Garlic shrimp, leftover penne and salad

* Mushroom, Swiss, egg and turkey bacon breakfast bake, fruit

* Turkey sausage sauteed with bell peppers and onions served on rice

    Wow so many familiar screen names :) welcome back!!!

    We had the last bit of spaghetti from yesterday today.

    For the rest of the week we will have BBQ pork in the slow cooker with baked beans and potatoes salad, baked chicken in cream of chicken soup with rice and a green veggie, I'm craving chili but it's too warm out for that so maybe a meatloaf with mashed potatoes and carrots and lastly, gourmet buffet.

    Our wedding anniversary is Sunday so I am totally expecting dinner out at least one of the weekend days that he is here :) can't do much with a toddler and a newborn so I'm thinking Carrabbas although I deserve Angus Barn lolololol

    Trying to plan meals based on my coupons: BBQ chicken thighs (about $6 at Wally World, only had about half the frozen bag), roasted squash with peppers (about $2.50 at Aldi's), Betty Crocker scalloped potatoes (with the coupon and ibotta[?], around $0.50/box).

    Observant, RFB, and Mothar, so nice to see all of YOU! :)

    Dinner tonight is a smorgasbord of leftovers and goodies from the freezer... latkes are in the oven thanks to one of my dear friends who shared them over the holidays, and Caesar salad topped with last night's leftover London broil on the grill. My failed coconut pie for dessert. I plan to add a lot of fresh whipped which will make it yummy. ;)

    mothar1 - 50 years? That's fabulous! Our 30 year HS reunion is this summer and I have known some of these ladies for 35 years. It was very rejuvenating and comforting to reconnect with such wonderful friends. It was absolutely worth the 14 hours of travel to spend 48 hours with them! And in case anyone is wondering, I am not a gambler, but I did blow a whopping $8 on penny slots. lol That's all I could stomach throwing away.

    Just a salad with the Purdue short cuts chicken and other good HT deal things, just want to comment on how nice for the long friendships and Vegas trip Faye, I have some friends of 50 years now, love that part of getting older, lol...

    HI RALEIGHFOODBLOGGER ! I have been missing YOU !!

    on my own 4 nights this week so I am
    thinking of at least some of the following :
    salmon , sweet potatoes , soup , fruit ( blueberries,strawberries, apples and pineapple )
    ( blueberries were $1.50 a pint at my Walmart yesterday - they were very good in our pancakes this morning ), I have some leftover rotisserie chicken in the freezer so maybe something with that too .

    Faye- thanks! We never get tired of salads with chicken, and chicken salad (which I made for my DH for lunch today as a sandwich :) I thought we'd get bored eating the same thing for days in a row (especially w/my history making new stuff constantly for the blog), but it's great. So much less stress, shopping, dishes, food waste, and money spent!

    B-RAN- thanks for the reminder on pork shoulder. I need to put that on my menu soon!

    RaleighFoodBlogger - you're back! Great to see you again. :-) And I love the idea of less time spent cooking but still having homemade meals. It's been a while since I have made chicken salad. I think that may be on the lunch menu this week.

    meredith88 - I hope your big event was a huge hit! And I really like the idea of everyone making their own mini pizzas for girls night. Very cute.
