Chicken fajitas

Here's the place to share your meal ideas for the evening or the week, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, read the comments section to see what everyone else is having.

This week we are having the following meals:

* Meatless Monday: Veggie chicken parmesan on spaghetti with side salad

* Grilled chicken and veggie fajitas, rice, clementines

* Salmon, Steamfresh protein blends with rice, lentils and veggies (free at HT SD), rolls

* I am going to borrow Twinredheads BLTA sandwich idea from last week (turkey bacon, lettuce, tomato and avocado on whole wheat bread). Sides of fruit salad and tomato soup.

    Meredith - Oh my - you do have a crazy week ahead! Good luck with your big work event. I hope it is fabulous! And good luck with all the teens as well. lol

    earlychd99 - have you tried the Red Robin fries yet? We tried the onions rings a couple weeks ago and were not thrilled with them. I baked them so they are probably better when fried, but I usually don't fry anything I can bake. Let us know what you think of the fries. I have a bag of them in the freezer.

    jdouglas13 - I am drooling at your amazing dessert recipe. You have to stop posting them. I can't take it anymore!! lol

    My daughter had to have surgery on an ingrown toenail, AGAIN, and I feel really bad for her so I promised to stop by and pick up some wings at Buffalo Wild Wings (her favorite). I have a gift cert from Swag Bucks so it will only cost me $5. Left over tot casserole for the other daughter and hubby. I'll probably have stir fry or a salad. Baked ziti tomorrow with leftovers on Wednesday. Chicken in some form on Thursday and baked fish/veggie on Friday. Homemade pizza on Saturday. Not super creative but it works for us :)

    This week is another crazy one with my big work event being Friday.

    Tonight we are having people over for dinner. We will have Olive Garden Minestrone soup that's leftover from a meeting at work last week. No one really ate it so I have almost a gallon left! We're having it with a giant mixed salad thanks to Aldi sales & some seasoned Italian bread. The bread is always just $1 at Walmart!

    Tuesday we are having the teenagers over for supper so we'll have spaghetti & meatballs by request. The spaghetti & the meatballs were free from a HT SD event. The sauce was also on sale at HT. We'll have the rest of the mixed salad and Italian bread to go with it.

    Wednesday I'm on my own for supper. I'm actually really excited to have Raisin Bran for supper! I love cereal and never get a change to eat it :)

    Thursday I'll be at a work event getting ready for the big event. My husband will be at school & the teenager will be at someone else's house.

    Friday I will be asleep after working 34 hours!

    LOL - Faye you are so right about not leaving it out on the counter to defrost. It was so late when I took it out, I expected it to still be half frozen this morning. Wrong.

    Twinredheads, BLTA sounds really good as a salad, too.

    I was just reading a recipe for a Black Forest dump cake -- basically a can of cherry pie filling, a can of (preferably) tart cherries, put in a cake pan, sprinkle with dry chocolate cake mix, sliced almonds, and a stick and a half of pats of butter. Bake and then serve warm or room temp with whipped cream. I may ask DW to take a quick run up to the store..... :)

    Grilled chicken breast sandwiches, Red Robin fries, and pasta salad. Brought the chicken breast , Kaiser rolls and fries from HT. I will probably add provolone cheese, bbq sauce to mine.

    twinredheads - I love anything on rye and I bet your BLTA's would be fabulous on it.

    Jdouglas - I still have some in the freezer - thanks for the reminder! And I am pretty sure that every food safety manual every written says not to thaw stuff at room temp. ;-)

    raesmom1612 - it's such a great day fort he park, although it is a tad windy. Enjoy!

    I stole the BLTA sandwich idea from when I worked at Red Robin during grad school. They serve it on croissant but my husband had it on rye and my daughter on Texas Toast. I had mine over romaine/spinach as a salad :)

    We don't have a full menu either, but tonight we are going to have an eye round roast (if I didn't over-defrost it on the counter overnight) with roasted potatoes, gravy, and some kind of frozen veg. Plan B, if the roast is no good, is hot dogs on the grill for DW and ??

    Also likely to appear this week are Caesar salad with shrimp, Chicken-cheese-corn enchiladas (first time ever making anything remotely Mexican), and some kind of steak on the grill with side salad and garlic bread.

    Twinreadheads, I really like the idea of your BLTA sandwich too. I might borrow it with a tweak or two for DW. Personally, I'd like it as is. Toasted rye for mine please. Faye, are you out of rye bread?
