Chicken enchilada zucchini boats

Here's the place to share your meal ideas for the evening or the week, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, read the comments section to see what everyone else is having.

This week we are having the following meals:

* Crusted tilapia, roasted veggies, wild rice

* BBQ chicken sliders, spinach salad

* Baked cheese ravioli, garlic bread, salad

* Shrimp salad, deviled eggs, croissants, steamed carrots (after all the deviled eggs on everyone's menus last week, I definitely had to put them on the menu this week)

* Chicken enchilada zucchini boats, corn (kids will have chicken tacos)

I made the zucchini boats last week and they were delicious. I basically put a filling of cooked chicken, sauteed veggies and salsa into a steamed and hollowed out zucchini and topped with a bit of parmesan and baked at 350 degrees for 15 minutes.     Here is the best I have to offer this week:

    M - Pizza
    T - Hopefully grilled London broil if the weather holds and DH gets home at a decent time
    W - Ash Wednesday - DH will be abstaining from meat and it is a day of fasting for him. I will probably have a sandwich before he gets home
    TT - Meatloaf
    F - Tuna casserole or tuna melts because DH has to abstain from meat on Fridays but somehow fish doesn't count and the only fish I will eat is tuna.

    We're having pork chops with onion and mushroom soup cooked in the oven. Also, scalloped potatoes and garlic bread. I am adding some green beans in the pork chops and warming some leftover butter beans. Hope to make some kind of dessert, if time permits.

    Other items on the menu this week will be:
    homemade pizza
    London broil roast, leftover potatoes and broccoli
    Meatloaf, creamed potatoes, cabbage & corn on the cob

    JDOUGLAS13, Cube steak is really good in the crockpot. I fry mine in an iron frying pan, then make the gravy, adding an onion. Then I put it in a pyrex dish in the oven at 350 for about 1 hr. or 1 1/2 hrs. It is so tender you can cut it with a fork and the gravy is wonderful. I check it after about min. to see if it needs additional water since we like a lot of gravy. Enjoy!

    Lindabates, what a good idea to put the cube steak in the slow cooker. I really liked pan fried cube steak when I was a kid, but we used to get them from the butcher, and they ran them through the tenderizer several times, unlike what's in the grocery store now. I will have to give a it a try.

    No definite menu yet, but here's what I've got so far:
    - homemade pizza
    - M&C with broccoli
    - roasted cauliflower with parm and bread crumbs, pork chops in the slow cooker (the only way I can successfully cook them, and even then it is iffy!)

    I got a whole Angus NY strip loin on sale at Lowes on Fri. Once trimmed and cut into steaks, I ended up with 12 huge steaks, each enough for 2 people, for about $7 each. If it's nice enough, we may have one on the grill this week.

    Its week two of being home with two children and I've got a friend bringing a chicken pasta dish tonight that will have for leftovers tomorrow and a few friends coming by Wed or Thurs bringing anything they want :) I'm just really loving the company!!! DH will be home Friday and if this coming weekend is anything like this past weekend we will be going out to eat at least once while he is here.

    meredith88 - It sounds like we do the same thing at our house that you do with making the same main dish for everyone, but various sides depending on preference.

    OK Lindabates- I have to know how to do the bacon wrapped corn on the cob- sounds wonderful. Because everything is better with BACON!!

    Monday: crockpot cube steak with gravy, mash potatoes, bacon wrapped corn on cob, biscuits.
    Tuesday: crockpot chicken pot pie
    Wednesday: wedding anniversary, gonna stay home but not sure yet what we will do for dinner
    Thursday: breakfast.. maybe sausage and has brown casserole, cheese toast, and some fruit
    Friday: dinner out to celebrate mother in law and her twin sisters birthday
    Saturday... no clue it's grocery shopping day, depends on what I find at the store

    Faye, your zucchini boats look fun. Another way to go is to brown ground meat (beef, pork, chicken or turkey) with some onion, add a litte ricotta cheese and marinara sauce, and top with some parmesan cheese :)
