Green Pepper Pizza Bites

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

This week we are having the following meals:

I'm not sure what order they will be in - but here's the overall menu.

* Baked salmon, roasted sweet potatoes, salad

* Chicken & spinach quesadillas, creamed corn, clementines

* Green pepper pizza bites (see recipe link above for the zucchini version), crescent rolls and spaghetti and peas for those who do not like the idea of pizza in a green pepper. :-)

I really wanted to try the zucchini pizza bites recipe this weekend but I did not have any zucchini. I did have a green pepper, so I roasted it and then filled the little green pepper "boats" with marinara, sauteed mushrooms, shredded chicken and cheese. I baked them for about 8 minutes and they were great! So we are having them again this week - well, at least I am. You can see the photo of my green pepper pizza boats above.

* Breakfast for dinner: Veggie & cheese omelets, turkey bacon, fruit salad

* Garlic shrimp and veggies on a spinach salad, crusty bread

    Coupon4me, what a great healthy, yummy, frugal meal! You can't beat that price for a nice dinner for 4! :)

    We are having garlic chicken drumsticks with roasted eggplant and a (green giant box) carrots, cauliflower and broccoli with cheese sauce.
    Simple truth chicken marked down at Kroger for $3.50 for 6 drumsticks. Eggplant was a markdown too for $1 and veggies on sale for $1. = Dinner for 4 $5.50!

    Tonight we're having a roasted chicken (HT $0.89/lb sale) with stuffing, and maybe broccoli.

    I woke up this morning from a dream about pasta. In the dream I was making a white baked ziti with ricotta, parm, shallots, sautéed mushrooms, frozen (defrosted) chopped spinach, and bacon. It sounds pretty good, so I think I'll try it tomorrow. It must be all the talk here about "Baby Ziti". :)

    meredith88 - I can see how it would be bland. The green pepper was definitely not bland. And I usually get mushrooms, onions and green pepper on my pizza so it really had that pizza taste for me.

    Thanks Faye! I just thought the zucchini version was bland. It wasn't bad, but it wasn't very good either.

    meredith88 - thanks for the warning on the zucchini version. I loved the green pepper version so I may stick with that. I roasted the pepper first to soften it up before putting the toppings on. And good luck with your exchange student!

    M: baked pork chops, green beans, Mac n cheese biscuits
    T: hotdogs and chips
    W: breakfast for dinner
    Thursday: burgers and fries
    Friday: chicken, mash potatoes, corn
    Saturday: sandwich and chips
    SUNDAY- Pizza and appetizers for the girls and I... we plan to watch the puppy bowl on animal planet, husband is going to watch game with his friends... sending sausage dip and scoops chips with him.

    It's the start of another crazy week! We officially have a teenager living with us for the next 6 months and it'll take some adjusting to her very busy schedule and to feeding third person who eats every two hours ;-)

    Tonight we are having homemade chicken nachos. We make the chips ourselves by frying cut up flour tortillas. Then we top the chips with some chicken chili that was made for us by friends last week. Add a little cheese from the HT B2G3 sales. Served with fresh avocado, tomatoes and sour cream from Aldi this week. Salads on the side.

    Faye, your pepper pizza bits look delicious! I've made them with zucchini and didn't really care for them, but I love peppers so I'll have to try your way!

    I got lazy last night, so meatloaf, roasted potatoes & broccolini are on for tonight. Last night ended up being pasta & meat sauce :)

    M - pork chops, stuffing, and granny smith apples (the recipe is on the back of the Stove Top stuffing box)
    T - a doctored frozen pizza (DH has a meeting)
    W - we have been invited out for "Burgers and Beers" with some friends
    TT - tbd based on new sales
    F - grilled steaks with sides to celebrate the last Friday before Lent
