Weekly meal plans and Monday dinners

Posted January 25

Sushi

Here's the place to share your meal ideas for the evening, post where you bought the ingredients frugally and even share a recipe if you would like.

If you need some inspiration for your own dinner tonight, read the comments section to see what everyone else is having.

This week we are having the following meals:

Monday: Chicken enchiladas, rice, steamed broccoli

Tuesday: London broil in the slow cooker with carrots, potatoes, mushrooms and onions, and rolls on the side.

Wednesday: Sushi Wednesday - Lowes Foods in the 40/42 area offers select sushi for $5 on Wednesdays so about once a month we splurge on sushi. And we only eat the cooked varieties. :-) Sides include clementines and leftover veggies from Tuesday night.

Thursday: Sandwiches using the leftover London broil with sides of sweet potato fries and salad

Friday: Breaded tilapia, roasted veggies, rolls

Ascherer, I am no expert on ham, but the last one I made was done in the slow cooker. I didn't use any glaze, but no reason you couldn't. We both thought it was pretty good, although I just read Walkerwest's suggestions and that really sounds good.

Tonight is breakfast for dinner: hash browns, breakfast sausage, and something with eggs. I got some of the stew beef on sale at HT, and will turn that into beef stroganoff with noodles one night. I'm also going to make split pea soup, so that will be good for a couple of nights, too.

Haven't decided on the final choice but it will either be:
Beef stew in crockpot (making as I type) with carrots and onions & biscuits or
Moe's (have a freebie birthday deal to use by tonight.) I am so frugal l I don't want to waste it!!!

I am trying to plan my menus (not very good at doing that) so I can use some of the food in my freezer. I have made a master list of meats with the dates I bought them and will plan my menus with the first in the freezer, first to go out of the freezer. I have so many veg. and other items that I have not tackled that yet but I will.

Have to say it was great to just have to buy milk and bread during the snow; however I did pick up some snack items. I think I could blame the snow on about 5 of the pounds I have gained lately.

I was working on all my recipes (boy do I have a lot) and the more I looked at them, the more I wanted to eat. Got some good ideas to change up some items I normally prepare.

garnertoy - where are you? I need some of your helpful menu ideas. I think you and I cook like each other.

Ascherer, I'm trying to make out my list for the week and I think I'm going to steal your chef salad idea for either tonight or tomorrow night. I'm about to head over to Faye's HT deal list to see what's on sale.

Re the ham: we made Baked Ham with Honey Mustard & Apples http://www.aspicyperspective.com/baked-ham-with-honey-mustard-and-apples/ last year at Easter and I wrote on the recipe that it would be my new go-to ham recipe. Very good and a nice change from the mustard and (gack!) cloves that my MIL used to bake.

Going light tonight. Boneless pork cutlets with hoisin sauce and veggie cous cous (chop up onion, carrot, broccoli and celery and cook in water before adding cous cous...one pot)

I'll take a stab at it.
M - Stewed beef on biscuits with a veggie (beef roast from Sam's marked down for a quick sale; biscuits are Mary B frozen & bought on sale; & veggie will be whatever looks good at the store)
T - Chef salad (Momma has some eggs that need to be used & a pound of bacon thawed that needs to be cooked)
W - Breakfast for dinner (eggs, bacon, sausage gravy & biscuits) or maybe an omelet with gravy & biscuits (Momma buys sausage patties frozen from Sam's - you just cook what you need)
TT - Freshly made chili with corn muffins (all of the canned goods were on sale - hamburger was a discounted bulk pack - I found some frozen tomatoes & peppers in Momma's freezer)
F - Dinner out with my Beach Family
So far I have made the stewed beef. Next is the big pot of chili. At some point before Momma gets home on Sunday, she wants me to cook the spiral sliced ham that is in the freezer. Anyone have any tips on this. I have never done it before. All tips are welcome. Thanks
